What am I doing wrong?

your coffee machine has a dual wall filter basket otherwise known a creme enhancement etc. If you pull the filter basket out and have a look you will see that there is only a single small hole in the bottom. It's designed to give acceptable pours when you are using store bought pre-ground and stale coffee. I may be wrong but I don't think your machine has a pressure release valve either. So when you finish your pours there is nowhere for the pressure to go as it is not released until you unlock your portafilter.

What am I doing wrong?
Sunbeam EM5600, holding pressure somehow in the group head so even after steaming the milk etc, it will "blow off" and splatter the grinds when I release the handle from the machine.
The puck will be very wet and muddy, splatters everywhere if you use the knock box.
I have been experimenting with packing/tamping methods as the crema is still flowing too fast.Tags: None
