  • Using too much coffee?

    I operate a small coffee setup at our local entertainment centre, and have done so for 10 years. We have used the same brand and blend of coffee for this entire time. We have recently changed coffee companies and are now using a new blend.

    We have also started using the 20g VST filter baskets and have noticed a distinct change in the amount of coffee we are using. I have noticed the new blend of beans are distinctly smaller and seem dryer in appearance. While I am reasonably confident that I have dialled in the dosing and grind pretty well I am very surprised as to how much extra coffee we a using. We are talking a significant amount here!

    The owner of the new coffee supplier often mentions to me the amount of new coffee shops he now supplies and how much extra coffee they are now using. Is it at all possible that this new coffee is being roasted in a way that somehow it makes you use more coffee, as silly as that sounds!!!!

    Would the new VST baskets make that much difference, especially if I havent got everything absolutely tuned in?

    Someone is sure to correct me if they think I'm wrong but I think it would be possible that the roast can cause you to use more coffee.

    Suppose the roast is darker or instance.
    The beans would have less moisture so the pour would run faster.
    You would compensate with a finer grind or more coffee.

    The roast may be older.
    The same symptoms as above.

    You might be onto something.

      Darker roast definitely makes some difference (and beans differ regardless of roast level). But it's pretty hard to answer the OP's question, as he/she appears to have changed two things at once (the basket and the beans), and we don't know what baskets were being used before the VSTs came on board. Were they nominally 20g baskets? Or standard commercial doubles?
