When I was in the navy we had weevils in the flour within a couple of weeks after leaving land. They added some fresh meat to the diet. Never did me any harm so I would continue to roast the coffee.

Yep, my family and I have lived and worked in some very remote locations in mostly tropical areas where fresh anything was a distant reality. Weevils and other creepy crawlies were pretty well expected to be setting up house in anything remotely resembling flour, rice, potato flakes, etc....
Anyone who was particularly worried about them could pick them out after they were cooked and put 'em on the side of your plate...
