  • How much to extract

    Most sites recommend extracting around 30 ml from a 7 gm shot.
    I bought some New Guinea coffee and the instructions suggest for best results extract 20 ml per gram of beans.
    Well for a 14 gm double shot that is more than a small cup, can't see how that is going to work.

    Does anyone pull this much extract from their grind and if so what is it like?
    You would have to take your coffee black.

    20 mL per gram of beans is way off the spectrum. I suggest you Google the concept of brew ratio for espresso... that should provide some good benchmarks. I'm at the other end of the spectrum and regularly extract 15-20 g of espresso from 22 g of beans.

    For pour over, however, I tend to use 16 g of water per 1 g of coffee, although I'm not exactly sure how much brewed coffee that actually produces.

      Are you sure that the 'per 1 gram' isn't actually 'per 7 gm'? ( 1 an 7 can look similar). Or, it may be a misprint, where the number of grams has failed to be visible.

      7g to 20mls is plausible (and possibly quite nice).

        You would have to take your coffee black.
        Maybe for some kind of a drip/filter/pour over brew, but no way for espresso.

          I'd give up on any volumetric based decision making if I were you, that was my biggest hinderance to getting a good shot.

          Stop the shot when it starts to turn a lighter yellow (blonde), regardless of volume. Should take 25-30sec. If not adjust grind and/or tamping till it does.

            Totally agree with MFF above -watch for the colour change
            For novices like myself, throw away the shot timer for now, and watch the extraction… and count in your head. Best done with a naked PF so you can see the consistency/draw through of water, but not essential… and adjust grind/tamp from there!

              It's vary varied: I'm pretty happy with about 17-18g in a 15g basket and (out of one machine) getting 25ml in 33-38 seconds (8 seconds until espresso oozes out of the portafiltre).

                        For me it's 22g to approx 30ml in 25 seconds. .....roughly. That's a thick, gloopy ristretto

                          I work on 30 to 40ml from 20g over 30sec - I'm sure it changes from machine to machine but this ratio has never failed me !
