As roburu said, it takes considerable time and training to develop ones palate. Some 'super-tasters ' are just born lucky! I could suggest making up some sugar, salt and lemon solutions of varying ratios and dilutions to help with grasping basic sensory components in coffee. Instead of splashing out on a Le Nez kit you could just replicate some of the key coffee aromas in the kit with actual food samples eg cloves, stone fruits, citrus rinds etc Granted its a bit more work but a whole lot cheaper! Organic acids also play a huge role in coffee flavour and sensory experience eg malic, lactic, citric, acetic etc You can make your own solutions using common supermarket products, but apparently there are kits you can get too which I'm yet to find!
Like with anything else, the only way to get better at something is to train for it. You can train your palate by tasting things and trying to identify the particular taste in the coffee cup. Have a look at the coffee flavor wheel (https://www.scaa.org/?page=resources...a-flavor-wheel) and next time you cup a coffee try to identify the aromas. Start with the basics and build from there. You can also go through the sensory lexicon (http://worldcoffeeresearch.org/image...ion_1_2016.pdf) and work out what the flavors on the wheel mean. It takes time and practice but you do get better. If you're serious about it you can get the Le Nez kit: Le Nez du Café - Revelation 36 aromas - Editions Jean Lenoir but it costs a chunk of money.
Gets guys, I've been doing some home roasting on the behmor for a little while and I'm starting to do a little cupping at home to test the flavours etc to try and enhance my roasting ability. My question is, does your palate develop more over time and experience? I hear people speak of specific tastes and aromas, I don't experience this myself so much.
