Do Competition Level Barista's Work In Cafe's?

I am going down to Melbourne CBD for a week and was wondering if I could find a cafe where a real Barista works. Meaning on a competition level type of barista. Or do they not work in cafe's for a daily job? Probably seems like a dumb question but thought I would ask on the forum just in case they do. Thanks,

My guess would be that many of the very best baristas would not have the time to compete. Check out the best Melbourne cafes thread. That's pretty reliable for finding the best coffee.

I can't help you in Melbourne, but Fiefy is often at the machine in Adelaide.
