The only thing I would question is whether a cafe would pay $30 per kg? I know of a coffee roaster I can pay $30 per kg, a minimum of 3kg but really good beans. Of course I prefer to pay $8 - $15 per kg depending on the bean and roast my own. Surely a cafe buying bulk can pay $20 per kg?
I'd question his philosophy. You don't make products to suit yourself, you make it for your customers. While he can taste the difference, chances are his customers all drink milk based coffees can't.
