It almost certainly sounds like a grind and dose issue.
We added the optional group head pressure gauge to assist in getting true group head pressure, not just the pump pressure at the pump gauge.
The fact that you are getting 10 plus bar with the blind filter shows that the pump, opv etc are all working as normal.

I have realised that I was a complete newbie for sure! as I was going backwards with the grind setting.... and therefore what I thought was making the grind to be finer, was in fact making it coarser and hence low pressure and quick extract and sour tasting coffee!!!
All has returned to normality and making great espressos again on my new shiny toy!
Lesson learnt - use good quality fresh beans and when swapping out the beans, grind and throw some out and before panic sets in, learn to check which way I need to turn the grind dials for finer grind or coarser for that matter!
Your machine is fine - if it reads 10-12 bar on the blind filter the pump and bypass/over pressure are doing what they're supposed to. Adjust your grind and dose out 10-15g, throw it out, and dose out another and pull a shot.
The machine I have is - La Pavoni Cellini Premium and Quamar Q50P all new from *****.
The situation was that, I was using the beans that I was given with from ***** (which was awesome by the way!) and then bought a bag from Five Senses from Cheltenham here in Melbourne. Both beans I was able to get good consistent 9 bars with. Then I was given a bag of beans (was told it was freshly roasted on that day from Cisco in Prahran) and when using that, it all went down hill from there. As I was not able to find any good pressure with it. And since then I have tossed all of the poor beans from Cisco and back onto Five Senses but still not getting the right pressure nor rate. I am thinking it is down to the grind... but was just wanting to know if the machine was playing up...
quick question....
i have been using my new HX espresso machine for a week and a half... and it has been working really well. But i have noticed that when I am doing the backflush, the pressure is at 12 bar which has been where it was since the beginning. However when I put coffee into my pseudo 20g basket with correct dose and been tamping to the usual method and then start the brewing process, it only goes up to 4 bar. Previously I had been getting consistent 9 - 10bar pressure during extraction. So I had initially thought this was due to bad quality beans and when I switched it back to the good beans - ones I was getting good consistent 9 to 10bar whilst extracting, it was still at 4 bar (and therefore poor espresso).
what am i doing wrong? or something wrong with the machine? (i hardly doubt...and hope not!) but when I do a blind basket and do a test, then it goes back up to 10 to 12 again...
any tips please???
