And no matter what you do, always go by taste - there's no right or wrong 'look'.

I'm hoping someone can clear up my confusion.

For years I was told a double shot (18g) on my machine should produce 60ml, including crema, with an extraction time of 30 secs +/- one second.

Now I read that volume measurement of the shot is out and weight is in and I should be getting a ratio of about 1:2. So with 18g in I should be getting 36g out in about 25 - 30 secs. Now if I do follow this I only get just under 30ml out and not much crema. Is my understanding correct??

As we only have latte, caps and flats at home should this be the recipe I should be following as it does not look right in the cup.

    TIA

    Greg

The recipe you you should look for is the one that tastes the best to you Greg. But what is useful to know is the ratio you like. So do what you normally do, just weigh the shot. You then have a reference point for that blend.

As Barry says 36g of shot is normally 50ml odd, give or take.

OK, I will check that again. Like you said it does not add up.

1:2 ratio by weight is ok. I'd be surprised if your 36 grams of brewed coffee (including crema) = 30mls. That would make it denser than water. Typically 36g of brewed coffee will produce 45-60mls depending on amount of crema etc.
