Hey all just to finish off my issue. I decided to pull out the filter basket that came with my profitec 700 this morning after much head scratching. I instantly noticed it is about 4 mm deeper then the pullman basket. So that straight away made me think that the puck is too close to the shower screen . I replaced my stock shower screen that comes with the machine for a IMS screen which at the time I thought that sits a lot lower then the stock screen . Old trick for young player there I realise is yes the new screen fitting lower then the stock coupled with a shallower basket then stock and bamm double the impact to the puck I guess. So tried 18 grams into my stock filter basket and the shot was much better . Promising. Then dosed 16 grams into my pullman filter basket to see if the extra clearance would improve the shot from the pullman. Well what do you know it came out as I would expect and see everywhere on the internet from the naked handle. So I dialled in the grind with 16 grams again into the pullman ( 17-19) basket and bamm again the shot was beautiful to watch. The taste in the cup was totally different and much much better to say the least. So after a dozen or so shots to confirm this theory and all shots are beautiful as I would expect from this machine. I know the more experienced campaigners would have picked this up much earlier then I but to finally work out why my shots were not working and see it change for the better rather than just guess and try this try that and not understand what I was doing wrong is good.So now after too too much coffee today trying to sleep tonight will be another issue.
Thanks everyone who has offered advice or asked question to try to help , I appreciate the assistance. It is truly great the help offered on this site.
I will however continue to experiment and see what works for me but am very very happy with my coffee now.

It’s a good example of overhandling the ingredients. Like the guy cooking a steak that flips it 16 times, can’t help poking and prodding it... meanwhile the trained chef flips it once, leaves it be and produces a vastly better result.

The simpler you can keep the process the better the outcome, check out the technique of barista's in your area, no fancy tools, geegaw's or rituals involved, they dose, tap, tamp, that's it, sure some are better at it than others, but that's just down to experience/aptitude.

Haha thats funny as I already use a pullman chisel . Yeah i weigh into tiamo cup then grind into the portafilter now and it has been better by far. Thanks for the suggestion guess it must just be my technique but I'm getting slightly better

I had trouble in the past manually distributing grounds using my finger. Would look at the puck after extraction and would often find a small crater in the same spot. Tried adjusting my technique numerous times, but the crater would return. Ended up getting a Pullman Chisel distribution tool. Problem solved! Few quick spins, a tamp and good to go. Looks great too.

As an experiment I just half filled the Mini hopper with beans, ground 18 grams into a container, then carried out my usual tap and tamp procedure, as usual the result was very good, no different to single dose.
Perhaps its down to close encounters, though somehow I don't think so, I suspect its more to do with operator error.
