Before you judge "boutique" roasters you need to meet with some and Im sure youll find that consistancy of product is not a problem.
You may have a legitimate concern regarding volume of supply in the long run should you do well but in the short term you agree not.

That might not be the intention - but that will be the reality....
Bit like selling chateau cardboard 5L casks of wine...... they are consistent..... they are readily available but are they good? NOPE!! No one would ever compare them to a Grange Hermitage.
But there is a lot of money in mediocrity..... Just look at the Big Mac

I found your post an interesting read and I think it presents many questions.
The first would be are you planning on taking the existing customers that you look after? That would have quite a few ethical and moral issues (only you can deal with those).
What are your goals? Make more money? Have more control? Build a “brand”?
I’m sure setting the goals will make the next step more obvious.
