I'll start by getting a burr grinder and some fresh (better quality) beans

yeah...you'll need to get a good burr grinder if you want consistency and quality from your coffee. blade grinders just chop up your beans willy-nilly and will leave you with tiny tinies and huge huge-ies - which is bad for brewing. burr grinders will give you a good amount of smallie-smallies that are around the same size - important for a good-tasting coffee. the breville smart grinder pro is decent enough for your purposes and cheap.

Blade grinders will not be able to grind fine enough for espresso. Better to buy ground from a local roaster until you can get your hands on a burr grinder.

    thanks again.
    It's a blade grinder
I'll def chuck out the bad beans and ground
The model is some department store branded one

Chuck your supermarket beans in the bin and buy a bag that has a roast date rather than a use by date.
I doubt your grinder will be able to grind fine enough for espresso but do tell us what model you have. A decent grinder will make a lot of difference to the quality of your coffee.
The dampness of the puck is typical of a machine that doesn't have a 3-way valve. You might also want to consider buying a Krups basket to replace the pressurised basket that cheaper coffee machines such as yours employ to improve crema.

Is it a blade or burr grinder?

    Thanks.
OK so I reckon I've failed on the beans at least. I got beans from the supermarket at least 2 months ago, and I ground a bunch then.
It's only a cheap grinder I got and have it sent on the finer end of the options (there are 5 from course to fine)
Extraction time varies as I try to work out how much ground and how much tamper is required.
Sometimes the ground is damp and others it's flooded after the brew has finished

Hi and welcome! There is ample information available on this site (search feature in top right). There are also training courses you can attend. As for your immediate problem, could you answer a few questions to help diagnose the possible issue (s)?

What sort of grinder? Where did you get beans? How long is your extraction time/volume?

You should be able to get a good brew from your Breville but you skipped a few details:
What beans? Ideally, the beans would have been roasted within the last month and preferably the last two weeks.
What grinder do you have? This is very important because if the grind isn't fine enough, you will end up with weak, sour coffee

Then, assuming you have good beans and grinder, there is technique. Check out youtube vids like this one
