I used to have no problems with a La Marzocco 12g single. The key thing that a lot of people get wrong is you must dial in a different grind to the double for the 'export' single. For the Italian domestic single (7-8g) you don't need to dial in another grind setting. Once the 11-12g singles, with the shoulder, are dialled and dosed correctly you will get decent shots.

Yes all sounds interesting TampIt. Didn't know that about the VST baskets. 7g is just undercooked for my worn out taste buds. 10g would be great. If only....

i like the sound of that, may have to invest in some vst baskets, i tried this with my decent espresso baskets and found had to adjust grind for each basket size

FYI, a number of single baskets are "untampable" (those with a shallow bowl shape) and should be avoided like the pestilence they are. The "shoulder" you mentioned is a large part of why the VST single works - it is flat and so has a proper internal tamping area for the grounds. Using any flat based tamper of the correct size is easy - in a pinch I prowled around a mate's kitchen one day and used a 2.2 litre fruit juice bottle simply because the lid fitted the basket properly. I ended up getting my own custom tamper as a convenience, not a crushing need.
My grinders: Mahlkoenig Gen2 Varios (or the gen3, I have both - apart from the p/f holder no practical difference) directly into the VST basket. There has been a generational change in preparing espresso nowadays (not noticed by some traditionalist diehards). Using a combination of VST baskets / naked / Vario gives a very even particle spread (as does the Monolith) which means you can up the extraction ratio by around 50% without picking up extra bitterness. That translates to about 50% more flavour in the cup for the same amount of coffee. That increase in flavour is why I ended up (after circa 40 years using a double) using a single for my daily cuppa - the 15g VST double was far too strong for my (intact, "not smoked out") tastebuds. The roast has got to be pretty poor (near sink shot) these days before I return to a double. Oh, and will someone please make a top quality 10g basket? The step from a 7g to a 15g is actually too large for some poorer roasts.
Yep: I also agree with the Bosco guy: a single gives a noticeably different result to a split double - a lot better in my view, however that may be largely due to the naked p/f not stuffing around with the crema as much.
Espresso machines: For a start, the grinder is way more important than the standard "commercial level espresso machine" in terms of "in the cup taste". Any one of a number of normal machines I play with (from SB 6910 / 7000 to 2 group La Pavoni to Linea) work at a similar level with any coffee. BTW, the coffee out of my Electra manual lever would thrash any of those machines on taste anyway, so count me as "waiting for my Decent to get a better outcome than standard machines hopefully without the hassles of a manual lever".
Overall VST singles are not difficult, just more finicky in terms of dosing / grinding texture / distribution (not an issue with the Vario - just lightly tamp it every 2m of fluff if you are OCD, which takes three tamps, or say stuff it and do it all in one hit). Isn't sorting your technique a main goal for any CS dude? Master a single and any other size is pretty simple to nail consistently.
FWIW, I dose to 7.2 to 7.3g and tinker with the grinding texture to get the flow rate I want - oh, and yep, the (Swiss made) Vario timer is that precise if I do three separate grinds & tamps! After I weigh the setup shot(s) to within 0.1g and sort the flow out, I just run the grinder until the level of coffee in the basket looks wrong and then weigh again to check. I find the roast only needs minor adjustments as it ages.
The good news - set up a cafe's machine accurately using the 7g and all the rest of the VST range need minimal tweaking for the next half day. Customary daily coffees*: If I am doing espressos that day. I also do cold steep, modded plunger, Rommelsbacher (aka electronic version of a stovetop espresso pot), Turkish etc. etc. depending upon weather and mood. Probably 80 to 90% espresso these days.
