  • How do fancy restaurants make their coffee?

    Not sure, If anyone else knows what I am talking about...but for whatever reason it seems like every fancy restaurant I've been to has good coffee, but a very different cup of coffee from anything I've made at home or got at a cafe.I'm thinking of that super smooth, low acidity, slightly sweet cup. Contrasted with a pourover or even a big batch brew at a specialty shop it doesn't have the same level of complexity -- but it is extremely drinkable. Are they sneaking in some other ingredient to smooth out the coffee, or are they doing something weird while brewing?
    Does anyone else know what I'm talking about, or am I just crazy?

    A lot of restaurants these days are using commercial Nespresso equipment to avoid employing a skilled barista.

      I have had the opposite experience with fancy restaurants, though I haven't dared order a coffee in many. Most of the ones I have tried use Vittoria, though the last time I did try was a year ago before the nespresso fad got going full swing. Last place I tried it was Tetsuya's, once in a lifetime meal followers by a coffee I immediately regretted and didn't want to finish, but did because it was Tetsuya's and if they served it I was damn well finishing it.

        Yeh, it's a long time since I've dared order a coffee in almost any restaurant. There's a local pizza joint that I trust but that's about it. I've had coffee at several very top end restaurants around the world and while some has been palatable, the rest have been pretty ordinary. In the end I gave up.

          i go to a fair few fancy restaurants and most do have good espresso machines, but unfortunately the coffee has never been anything good.
          I just dont bother ordering a coffee at the end of a meal any more

            Hi all

            The only restaurant that my wife and I have a coffee in at the end of the meal is a Turkisk/Lebanse/Greek one which does a coffee in an Ibrik. It's reliably good all the time. After a nice meal at a good restaurant I'm not longer prepared to risk a disappointment at the end.

              To answer your question in a word....terribly. For war and peace read on.

              In another thread I mentioned how I went to a very fine dining restaurant and took a risk and got Nespresso.

              You think about it though, a single coffee isn't going to make a restaurant much money so investing in staff training would be a bit of a waste of money let alone a dedicated Barista. Also, if you don't make enough coffees the beans will sit there for long periods of time. Without the training the grinder won't be dialed in and the coffee machine might not be cleaned for years. Then try to run a dirty coffee machine with a bad grind setup with staff who have only been shown how to use the machine. What about the tamp, the shot length, the milk, then the interpretation of what the different coffees are, so many reason's why the coffee most likely will not be up to the standard of a coffee snob. Just don't risk it.

              Do you pay corkage for bringing a bottle of cold drip?

                We seldom order coffee in a restaurant, its usually very ordinary and highly over priced.

                  Not a fancy restaurant experience as such, however last year we stayed at the Holiday Inn near Sydney Airport and they had a pretty high quality breakfast service. You could also order coffees from a 'barista' working on a commercial three-group and the coffee was appalling. So bad it's like they put in an extra special effort to make it taste terrible, and this seems to be a pretty regular experience for me with hotels. I'm generally not welcome in fancy restaurants however unless they were Italian or had someone who clearly knew what they were doing I'd avoid avoid avoid!

                      Interesting pick up Herzog, as is usual of late SmithH provides no detail about who he/she is, location or reasons for joining CS.

                      Wonder if we will be honoured with a subsequent visit.

                        Being so busy lately I only caught the headlines hence my initial response. After reading his post thoroughly I wonder which restaurant SmithH went to to get such an amazing coffee?

                        To his question, maybe he is crazy and is making jar coffee at home. Mystery solved!
