How about cutting a hole through the top and mount your knock-box flush (or just a replacement bar across a hole)?
Could collect the grounds underneath and free-up some top space.

With all the cut outs a left to right center support brace might be a good idea.

Ive also taken the idea and purchased myself the same trolley, Ive been toying with ideas and so far I have made a piece of wood for the top which is larger than the piece on it now to give me more bench space. To keep it light im going to wrap the front and sides with colour bond. Im installing a Milk jug rinser and looking at a pump to go underneath the bench at the moment which isnt a Flo jet. On the rinser side i will install a wood panel to mount the water pump for the Rinser. Im toying with cutting thorugh one of the trays underneath the bench so i can have two water containers. One for clean water and one for waste.
My only issue is i dont wish to plumb my machine in as i also use it for home and taking it on and off is tough work. The other issue is the reason im keeping it light as possible Im putting my gs3 on it with my Eureka Zenith grinder.
I guess the good things with these benches as they are a lot more sturdy than what they appear. That said they say there load weight shouldn't exceed 50kg..
I will post some pics soon when i get a chance, dont want to highjack your idea. But it was a great one!
