there is a cafe named cherry street coffee house. I had a great coffee there in 4th. Amazing espresso and great latte art. I would rate it really high

Eventually, after a lead from Robusto, I found my way to Espresso Vivace.

Was that cafe on 4th Street near Pike Place Market? I am trying to remember the name of a good espresso shop I found in that vicinity a few years ago. It had a very large copper/brass? boiler machine on the counter.

    Cheers

He is a perfectionist. He wanted the guys at synesso to take the machine apart and clean every part. Which would be 28 hours work. Takes 24 hours to make a new one. Talking to the guys in L.A cafe Luxe that was trained by him, even they are really compulsive.

David Schomer looks and sounds like an obsessive, compulsive perfectionist. Someone who finds no inner peace knowing his equipment is half a degree short of ideal.

There are strict cleaning regimes in his cafes, frequent grind re-settings, and even using water tanks in preference to mains water supply which may fluctuate and therefore affect pump pressure.

I would like to believe that all this meticulous dedication translates into giving consumers a great cup of coffee.

If it does not...it it is all to no avail.... what hope for the rest of them.

Is so sad in the U.S when you see guys using a synesso, with great coffee, great baristi, knowledge on espresso and equipment, running several grinders and great latte art, and people are asking for frappe with vanilla.

Billy at the Albina Press is doing a wonderful job. Visited there and the original Stumptown location when I went home to Portland last year.

There is some sort of espresso place on nearly every corner. The place is saturated.

Whilst the latte art may be lacking, the coffee scene is definitely huge compared to here in Oz. Whether the quality is the same is up for debate.

Most of the west coast of the U.S. (L.A., San Francisco, Eugene (OR), Portland Metro, and Seattle) are packed with great places to have coffee.

Hehehe ... I had some vivace vita earlier this year. I thought it was quite good. Its nice to see them taking a stand and going with monsooned malabar and robusta in that blend.

    Cheers,

    Luca

Stumptown has really taken over Portland. It does seem a little boring, i guess competition makes everyone better. It could be worst. Illys all over Portland.
Baristi were pretty damn slow at Vivace. 1000 clicks to pull one shot and then it comes out all bubble like. Line was out the door, because of the speed. A baristi on each synesso, and i honestly believe i could make coffee faster than both of them put together. They looked half asleep. I love when you see a barista pumping and in a zone.
Great to see COE in sooo many roasters.

San Francisco... Blue Bottle. Amazing and blew me away. Top 10 best coffees i have ever had.

Best coffee i had in Seattle was at the synesso warehouse. Those boys make great machines and also can make great coffee.

My experience was the same as AndyL.

I must say I was a little disappointed.

Seattle has awesome food and a huge range of really high quality specialty coffee roasters. The baristas just were a bit off the pace. Go Roasters!

Down in Portland it seemed the complete opposite. The baristas were much better. Unfortunately the vast majority of the top cafes were all using Stumptown beans. How boring.

I thought Albina Press in Portland was vastly better than Vivace. Attention to detail.

No where I could find performed the latte art as well as the top cafes in Australia. We have a long way to go to match the Seattle roasting scene though.

Actually looked like the coffee i had there too. I didnt like the crema and the extraction on the blend they used. Also i thought the blend didnt match the synesso. As you can see the crema has is bubbling out the milk. Dosing by sight and also using reallllllly fresh coffee is going to do that. The flavours dont look balanced. Sorry i wasnt a fan of Vivace. Good coffee but i was getting better coffee in the smaller cafes around Seattle.
With several Vivaces operating they have done a great job with the cafes and having soooo many good baristi. Customers at these cafes are so well trained. They make it easier for the cafes and if Australian customers were like people in Seattle our coffee would be 40 percent better.

The Aussie and Kiwis are soooo much better in latte art.

Seattle food scene is magic and the coffee is one of the best in the world. A city full of L.Ms and synessos.
