    Re: bubbles in crema?

Sometimes I have crema that dissipates quickly - usually when the beans are starting to get a bit older. Though if the beans are only 5 days post roast they may still have a lot od gas in them which will give you a large crema which settles pretty quickly once the gas dissipates.

Also some bean varieties also tend to lose crema quickly too.

Overly dark crema and bubbles can both be caused by a machine that is running too hot.

That would sound fairly normal for a freshly roasted bean to me. Once you let your coffee sit for a moment or two, how much liquid do you end up with?

And as for the crema being dark, well, that is what you want as well, IMO.

    Gday Ugotitbad,
When you say that your coffee is fresh, how fresh do you mean?
Coffee that is really fresh, very soon after roasting, can cause a lot of bubbles in the crema when the coffee is extracted.
What sort of machine and grinder are you using? A bit more info and your problems can probably be solved.
    All the best,
    Steve
