    I agree completely with Wushoes-David S when he said,

    "Learning to be a good home roaster requires lots and lots of learning."

    But that is just part of the magic formula...you can get fabulous beans, perfect roast....but still need the correct grind....correct volume of ground beans....correct tamp...correct setup of machine....etc. etc. and still stuff it up with too long a pour etc.

    Call it a search for perfection but the irony here is that one persons Godshot is a crap cup for someone else.

    The search for this "Godshot" an amazing journey!

      David, GrindOnDemand has already apologised for some of his earlier remarks, so Im a little confused with the tone of your post.

      I also take a little exception to the comment "Its home roasters like you that think youre roasting the best coffee in the world that makes me sad."

      Are you commenting personally or officially as Veneziano?

      Personally I can see what both you and he are saying and think you both need to be mindful of each others feelings.

      In my opinion just because a commercial coffee company fills a niche doesnt mean I have to like their coffee or what they do to fill that niche.

      Here in NSW clubs and pubs have poker machines that take a lot of money from people with low or fixed incomes.
      These establishments are still in business because they fill a niche.

      I dont have to like their product or how they fill their market niche either.

      Before you say dont compare coffee companies to pubs, my point was to dispute your reasoning. Maybe you can come up with a better argument.

      I have never bought coffee beans from a supermarket and never will.
      Ive only been on this Coffee Snob journey for about 12 months now but have learned a lot in that time and one is not to waste my time with that supermarket stuff.

      In a way, Ive been lucky to find this site and learn from you all.

      One thing we all have to remind ourselves of quite often is that we dont all exist under the same circumstances.
      We all have biases, conscious or otherwise.

      So back to home roasters, some may believe they are roasting the best coffee in the world, and in their experiences to date have proven to themselves that their coffee is better than any commercial beans theyve previously tried.

      Be honest, you havent tasted GrindOnDemands Biobean Peruvian Feminina, so cant say for sure that its not the best coffee in the world.

      I like some of the stuff I roast, and would be a bit annoyed if it was dismissed in theory just because Im not a commercial roaster with 20+ years experience.

      A commercial roaster I know has asked me about HG/bowl roasting because they were thinking about doing bigger sample roasts than a popper supplies.

      Ive supplied my home roasts to two cafe owners and their baristas to try and theyve been very complimentary.
      One of them is a former judge.

      Remember, Im an auditor, I deal in facts and evidence.
      Fact - Im not a commercial roaster.
      Fact - I only have 1 year of roasting experience.
      Fact - My palate has a lot of room for improvement in it.
      Fact - I follow process.
      Fact - some work colleagues have started buying my home roasts because they havent found anything as good before.
      Fact - Ill never put an existing commercial roaster out of business.
      Fact - I dont think theres any need to trash talk home roasters.

        I believe weve been down this home roaster vs commercial artisan roaster path before.

        Heres a quote from an anonymous artisan roaster. "Ive tasted some commercial roasts that are as bad as home roasts."

        As a home roaster I realise I have a long way to go on my path to making a well balanced espresso blend. Certainly Ive never made an espresso shot as good as a shot from a place like Campos (or Naked coffee in Brisbane) from any of my home roasts. In fact my current blend is still far from palatable as an espresso. However, I am leaning my SOs and am gaining an idea of what to blend, or what I want in a blend. The stop gap is that my home roasts are fantastic in milk and far better than most commercial offerings.

        I know that I could buy an espresso blend tomorrow that is far superior to my home roasts. But then where is the fun in learning and experiencing different SOs? So while I can make good to great milk drinks, I can work on an espresso blend/roast that I hope will one day work for me.

        So its not about hubris. It about enjoyment of a hobby and getting to drink the results, be they good or... not so good. Its also about trying a wide variety of beans including some very rare and legendary types. In short its about the journey, not the destination.

          Learning to be a good home roaster requires lots and lots of learning. The master roaster where I work at has over 23 years roasting experience, but doesnt proclaim to know it all. Collectively, within out company we know bucket loads about coffee. Coffee is a never ending pursuit for knowledge. Every bag from the same crop and estate has the potential to be totally different, let alone different crop years.

          I implore you to keep learning and not to take the "dont give a flying f***" attitude. To learn more, its important to compare your coffees to the best roasters in the country.

          Mate, youve got me totally wrong, & unfortunately have missed my point! Please dont be sad ...

          Firstly, Im not a home-roaster, & even if so would not be arrogant to think my roast-take on an SO, or magical blend is, outta this world ...

          I actually started a new thread today, via a different thread, asking for start-up advice on a roasting technique Id like to pursue. Never done it before, & am eager to venture there ...

          Background summary: I OWN a cafe in Brisbane, am hands-on behind the machine, and use a bean which is locally roasted by a roast-house that started as boutique but has now become a (major) commercial player. I am consistently happy with the blend that Ive specified, & worked with them to hone, that I know works for my customers, but at the same time like to explore what other roasters are doing throughout Oz.

          I have very graciously been sent SOs from Bio-bean & 5-Senses in WA, a sizeable couple of blends from Pioneer up here in Qld, & am currently working my way through & intending to test on customers next week in my operation 5 blends, & 2 SOs from Single Origin in Sydney.

          My support on a commercial level for boutique roast-houses is there, mate!!

          My take & gripe with commercial coffee companies was a poison-dart at multi-nats (Sara Lee who owns you-know-who, for example; or Coke, who owns you-know-who, for example)dominating the market with their stale pre-ground produce on the supermarket shelf, or marginally better served in cafes whole bean-then-ground to customers thinking warehoused Italian-sounding brands are the real Mcoy for real coffee.

          In short, there are commercial coffee companies who are boutique in essence (their fresh & great blends) but who are expanding but passionate about quality, then there are (BIG) commercial coffee companies who will never consider FairTrade until it becomes consumer consciousness linked & impacts their bottom line, source cheap Z-grade robusta as their instant base.

          & yes David, I recognise learning about roasting is a huge investment of energy, time, & shared knowledge - but like other CSers Im sure will concur, a labour of love. Not a task, but a passion.

          I know its been a detailed reply, but mate ya got me wrong from the starts methinks ...

          Cheers GOD, with huge respect for the "from little things, big things grow" roast houses out there doing good sh** blends!!!

              I cant help but think that this thread is somehow making people who would agree on a lot of things completely misinterpret each other. Im sure that all of the posters on this thread would agree on three things:

              *They have not tried all coffee in the world and are not, therefore, able to make credible statements applying to all commercial coffee or all home roast. (Nor do I think that any of the posters intended their comments to be interpreted that way)

              *The only way to improve your coffee - whoever you are - is to keep on trying different things from different sources.

              *If youre happy with what youre drinking and dont want to get too cerebral about it, GREAT!

              On that note, I might just segue into a little story. Those of you that find my little stories entertaining might like to keep on reading. Those of you that dont will no doubt already have tuned out by now. Onwards ...

              OK, so I was so appalled at the coffeereview.com review that gave a whole bunch of italian import coffees 88 to 93 out of 100, ahead of a few US roasters, that I ended up putting my money where my mouth is and having a blind tasting of a few coffees, including a few italian blends, some australian blends, some mountain top bin 35 and a random NZ coffee that was freshly roasted, but allowed to go stale. The coffees were extracted in the training room by someone else and brought out. Long story short, I rated the bin 35 and one of the australian blends top, with Illy trailing a bit. The tasting was the idea of a well respected roaster from Sydney and his top three coffees were the same, but he actually rated Illy number one. The barista noted that the Illy was the hardest coffee of all of them to work with. The NZ coffee that was about a month old came dead last, by a considerable margin. Definitely an interesting experience ... and one that makes me wonder what Illy might know that we dont ...

                I got so worked up I had to go and roast up 600g of Kimel.  ;D

                Im going away for 2 1/2 days tomorrow morning and dont know how Ill fair for decent coffee.

                I promise not to post when I get back until Ive had at least one double shot.

                  grrr ... not roasting just yet - but have some green PNG organic Okapa awaiting in the wings. Have heard of the Kimel, as PNG SO, but aint tried it - green (grrr) or brown.

                  Im worried that its not so great, from the vibes on your post, mate (?)

                        Well... Ive been holding off posting in this thread, due to its initial nature. But i cant resist now! It appears as though you have suceeded in frightening off the newbie  . I know apologies were made, but i think we should all take note so that it doesnt happen again.

                        The only reason I am commenting is that the same thing occured to me here when i was new. It wasnt a very nice welcome and subsequently caused me drop off the radar for a few months. Luckily i decided the site was such an asset that i was willing to give it another go. Since then i have seen the lovely warm generous side of many CSers, whos extensive knowledge helps me learn day in day out!

For those who get excited by this type of interaction, take it elsewhere- we dont want your garbage here. Fortunately, recent contributions turned things around somewhat.
