I would try sugar and spice near Anzac square....love their coffee, and it is roasted locally.

Just read in my local rag of a new mob of niche roasters that have sprung up here in Brizzy - Blackstar Coffee. Totally Fairtrade & organic blends. Apparently you can catch them at the West End Markets in Davies Park on Saturdays.

It seems to be that if the coffee provider owns the grinders and machines then your choice of brew is very limited.

Thats surely a sign of good salesmanship by those suppliers.
I tried a nice drinking chocolate that my daughter grew to like.
Initially they sent me a kilo for free because I had so much trouble trying to find it.
Since then theyve updated their website to more accurately list where you can buy it but the Managing Directors assurance that a new rep would soon be on board and extending the range of sales outlets appears to not have happened yet.
If the suppliers wont push their wares then theres nothing much you can do about it.

Some dont offer any choice other than decaf. I meant in different cafes, not the same cafe. What I am trying to say is that when you have the majority of cafes using beans from the same roaster (and usually in one of only a couple of choices of cafe blends) then you dont have a lot of choice- youll find the same blend in a lot of cafes- the only difference how well or badly its made.

xabitha ... M & DB both have a reasonable range of varying tasting blends. For a cafe owner to stock the whole gamut in display cases, sit down with the consumer & explain the choices, is a tad unrealistic.
Getting back to my earlier post, if you want, quote, "a coffee ... that suits what I feel like drinking in that moment", then simply chat to the barista about how you (in that moment!) would prefer your poison extracted. If theyre good & listening, youll get the best from whatever bean theyre using, & hopefully wont be disappointed.

Im not bagging the quality of either.. thats not what I said. I just dont like the lack of choice. Most cafes who use either di Bella or Merlo seem to use only one, (or a couple perhaps?) of their commercial blends made for cafes and Id like to have more choice- to be able to go to a cafe and get a coffee of a blend that suits what I feel like drinking in that moment. Just as I wouldnt want all the restaurants in the city to serve wine from the same two wineries- even if they were the best in the country! Tony, its hard surely for the customer to appreciate the finer differences in life if a great percentage of them never have exposure to a wider choice./\/

Ive had a few good DiBella coffees lately, I think the name suffers because its very widespread. Ive also made some great coffee with Merlo beans. I think the quality is there, just depends who makes it.

xabitha, Im a bit intrigued. Correct me if Ive missed your drift, but I think its unfortunate & highly presumptuous that you waltz into a cafe & pre-judge the coffee experience youre about to have purely on the basis of what brand bean is being used.
For the record, Im a brizzy cafe & I use DiBella - & Im damn pedantic with what my customers drink. Remember, a high quality roast can be compromised in a flash by an indifferent/untrained barista, or letting the beans go stale - its not just the bean that youre drinking, but the magic that the barista can extract from that bean. Ive been to cafes that use DiBella & have had some absolutely disgusting extractions put in front of me :P Then again, Ive had some enjoyable (rare though :
experiences from places that serve Vittoria purely because the barista knew how to work the bean.
Yes its an unfortunate economic reality that wholesale roast prices come into play when a cafe owner decides which roaster to affiliate themselves with - thats business. I keep an open mind though (& palate) - I consistently try a range of SO & blend roasts from the increasing variety of boutique roasters cropping up around the country. I believe in time you will see specialty cafes emerging that showcase smaller roasteries products (I for one see my future heading down that path) - but like the wine industry, or the burgeoning interest in slow food, for example, it takes time for consumers to appreciate the finer differences in life.

As somebody who is up against the big boys let me tell you its hard. For one their prices are dirt cheap, they have unlimited resorces (in comparison) to throw at accounts (umbrellas, wind breaks etc) and they have the name behind them. I can only sell my coffee on quality, and unfortunately the majority of cafes dont care about quality. Those who do have a choice of a growing number of specialty roasters, but the number of specialty cafes is not proportianal.
