Chesterton A Uneven extraction

As reported here, I didn't experience any problems pouring shots with this bean.

As you found your usual settings worked on other beans, I don't think there is anything wrong with your extraction technique. However, you will need to do some tweaking of the grind, distribution and tamp to see what works. You mentioned you got it right on one shot, what did you do differently to get that?
I roasted close to what Mal outlined with a 6 min drying phase, gentle profile and stopped just before second crack. I've gotta say the aroma that has permeated my house for most of the day afterwards was quite nice even if there was a bit of dirty sock funkiness (a la Indian Monsooned Malabar) at first.

Thanks All for the suggestions. I don't know how to describe what I'm seeing in the extraction as new to troubleshooting. I will try a drying phase and I think I may have been drinking them earlier than the 7 days I originally posted. I'll be interested in what Flynnaus finds.

It might be worth trying an extended "drying phase" before attempting the actual roast profile.
I seem to remember that this worked for previous Oz beans from this region and as a Low Altitude bean, trying to maintain a gentler profile may be beneficial, and then stopping a couple of degrees before 2nd-Crack starts.

I roasted some of this today. Seemed to behave differently to other beans in the roaster e.g. they took off a bit at first (24°/min instead of the usual 16 to 17°/min) and a bit harder to maintain a steady ramp.
We'll see how it pours in 10 days time.
I agree with FNQ - it's worth giving it a bit more rest to see if it settles down .

I’ve not got experience with them in particular, but I know some beans are harder to roast than others (I found the Rati Hartmann beans quite difficult to nail) and if you get it slightly wrong in the roast it can lead to extraction issues. I’m not saying you roasted your beans wrong though, it was just my first thought reading your post. Could you describe what you’re seeing in the extraction?

Just a thought to throw into your equation. Maybe the resting/degassing time sweet spot hasn't been reached or has been overshot? Sorry no experience at all with those beans.

Chesterton A Uneven extraction
Hi All,
I have hit a problem with my Coretto roasted Chesterton A beans. I roasted them a week ago and pulled them just before second crack. My machine is a Breville Oracle and the extraction is all over the place ie I can't dial the coffee in. Currently I have the grind set to 20 (looser grind than other beans similarly roasted) and the pours are randomly ranging from over to under extracted (4 pours this morning were under, under, perfect and over extracted without changing the grind). If I switch back to my China or PNG beans I have to tighten my grind back to the standard setting of 14 and extraction is spot on and repeatable.
I wasted a Hopper of beans trying to dial in these Australian beans and it is doing my head in. I was hoping someone might be able to give some insight/suggestions for what is occurring?
