They are both true. The liquid part of espresso (not including the crema) is denser than water due to the dissolved solids. Crema on the other hand is much less dense than water. If you take the volumetric measurement including the crema the millilitres will be a higher number than the grams. If you don't include the crema you're leaving out part of the extraction. The easiest way to do it is to only use grams for everything.

Hi level3ninja, Thanks for reply. I actually got very confused about grams and millilitres in espresso, not water. Some experts told that espresso is much lighter with crema bubbles than water, some others told that espresso is more concentrated with soluble-solids and should be much heavier than water. Thank you very much Javaphile for your reply. The issue is that I am drinking my double-triple-quadriple espresso with 2-3 tea spoons of sugar in 100 mL of liquid espresso and could not taste bitterness if the shot is over-extracted. Today I went to our Shepparton café and talk to John (owner) about his issue. He was very kind to me to explain what he is using for good espresso. He has double spout portafilter that is very deep and could accommodate (I guess) 21-25g basket. I never seen such deep portafilters before, because my double shot portafilter could only accept 18-20 g basket, but not 21g and bigger. For bigger baskets I am using naked portafilter and keep my coffee cup close to catch spills if any.
Do you know about deep double portafilters for E-61 head?

I love good espresso cup every morning after breakfast. But I also like to get enough liquid to drink. Therefore 20g double basket of grinded beans that according the rule should give me about 40 g (or mL) of liquid extract in 30 sec IS NOT ENOUGH for me. I am using 25-28g Pullman basket to get about 60-70 g (mL) of espresso extract during 50-60 sec of extraction on my ECM Classica PID. The question is: AM I OVER-EXTRACTING? But my espresso is very nice and full-bodied and I stop extraction before stream blonding.

Over-extracted Coffee
Over-extraction occurs when you take too much of the soluble flavours out of the coffee. This level of extraction results in unfavourable flavours.
Cast your mind now to an espresso of a typical specialty espresso roast that brewed for 40-50 seconds. Don’t pretend like you didn’t taste it when this happened once. It’s bitter, drying and hollow. These three things are the most obvious indicators of over-extraction. Let’s shine some light on them as well.
Here is a guide to baskets:- Standard single basket - dose 12g of coffee and extract 18g of liquid in 30s
- Standard double basket - dose 16g of coffee and extract 24g of liquid in 30s
- Precision double basket - dose 20g of coffee and extract 30g of liquid in 30s
- Double espresso coffee - dose 20g of coffee and extract 56.7g of liquid in 33s
Question is: Am I doing something wrong?
