  • Bitter crema?

    I have just started roasting my own at home (in an old popper  : - building something crazy soon.) and while the coffee tastes great, ive noticed the crema is very sour / bitter.

    The beans are called Blend 6 by the green bean roaster. I have a decaf from them which doesnt have the same taste, but then again it doesnt have any husk that flies off either (a feature of the water process?) I am waiting for my beanbay beens so I am not sure if it is roasting related or bean related. I was quite impatient and the beans went into the coffee machine about an hour after they were roasted, could this be why?

    Yes the lack of husk is a result of the water process of decaf

    A few questions;
    How far are you roasting them ie. First Crack, 2nd crack
    What are your shots like with pre roasted coffee are they the same?

      ive never had this bitter taste with bought coffee.. and just few clicks of second crack?

            a bit fast, probably about 8 mins for the whole lot.

              Typical of an unmodded popper.
              Actually on the longer side so better than a few.

              It may be the bean doesnt respond well to a fast roast.

              I dont try mine so soon after roasting so maybe its that.

              Which BeanBay beans are you getting?

                I dont think its all that unusual for crema to taste bitter.

                Some suggestions:

                If youve roasted dark, roast lighter

                Let it rest for a few days before you try it

                Stir it

                  just the PNG wahgi for now.

                  I plan to put a microcontroller+thermocouple in the popper this week to ramp the heat, hopefully that will get me by until I can build something a bit more elaborate

                    Thanks for the tips, I guess it was a bit off putting because it was kind of sour and had a bite to it... but not enough to make the coffee unpleasant. It could even be the beans, well see.
