  • Transferring Recipes

    Hi all,

If person A has a recipe, pre-infusion dose size ratio temperatures etc., with their machine that gives great results. Will those results be the same with person B using a different machine if they use the same recipe and coffee beans? And, if not why not?

    Sorry about the noob question.

    TIA

    Hi Gregeeh

That is a great question, but the answer is not so great. It all depends..... ( There , isn't your curiosity more satisfied now).

Working from a known good thing, is always a good start, but replication isn't always a simple thing... ( Have you ever got the cafe's signature blend at home and been disappointed that Your home made coffee just misses???

So , use the recipe as a starting point , but you nearly always have to tweak for your equipment etc ( eg 18 gm basket but no 22 gm, your grinder)

The grinder in the equation makes up a lot of the difference - but even if you get the cafe to grind for you , it isn't fine tuned - even the same grinder on the same day , may need slight adjustments on the fly.

The last thing, is what you are drinking. It is easier to get a good approximation of a med /dark roast for a milk based drink ( fairly forgiving) but to bring out nuances of fruit and acidity of a lighter roast is far harder to emulate. Good luck and have fun comparing.

"The same" ... maybe similar but never the same. Even doing two espressos back to back from the same grinder with all the settings the same can result in a different experience. To be fair, the difference will be slight but probably noticeable.

And if the beans are from a different roast batch and/or you are using different grinders and/or a different espresso mchine then the gulf between them will be large.

The challenge withh espresso is that we are working with, as Illy said, "a thousand different variables but only one perfect solution in the cup".

Thanks everyone for your answers, it make perfect sense. I now feel a lot better as my friends recipe did not workout the same on my equipment.
