  • The single filter

    Ive been making single ristrettos with a double and triple basket but the single filter always gives me trouble. For the most part I think most people seem to part with the single due to its difficulty. Does anyone have any hints on getting the best results from the single??

    I discarded my single after several attemps, the double basket produced a superior shot, probably because you have more grinds in the basket and more tolerance when tamping. I usually drink doubles or share a double with my wife so the single is sitting in the back of the cupboard.

      Hi Cervelo,
      Im probably the only one who still uses their single filter basket, but somehow the doubles can give me more trouble.

      Like fellow CSs will tell you, adjust your grind for a double and alter your dosing technique for a single basket. What I like to do is, overfill the basket and just scrape the excess with my finger. The trick is not to apply any pressure when scraping the top and using the same finger every time. What you will notice is that your fingers natural curve helps to make a slight concave scrape. So depending on your doubles grind setting, adjust the scrape depth for your single shots.

      As for the doubles...... I have two competing techniques that I use, and Im not to shore which one I like doing best! I guess this is why some times Im having double trouble.

        I still use the single filter when it is required
        Makes no difference to the shot or quality of taste
        The machine normally extracts 30ml in 20-25 seconds
        Depending on the bean freshness blonding normaly starts at about 20-22 seconds

          Thanks all. I had been having similar results to what Koffee Kosmo is saying but since I changed grinders the double and triple filters give me better results.

          Ive noticed an appreciable difference since upgrading to the mini mazzer and my former, overdosed singles were not up to the quality of the current ristretto shots.

          I like your suggestion, Rancho. I tended to put pressure on the grounds when scraping off the excess and ended up with an overdosed shot. Ill try that tomorrow morning. Its midnight here in Canader.

            Just stick with the double i reckon. I get the best results that way. Saves the trouble of changing the basket too. Im lazy.

              I have 2 porta-filters so it does not affect me that much
              1 fitted with a double filter
              1 fitted with a single filter

                    I have a two-part theory on why the single basket is so difficult to get right:

                    First, some single baskets are totally atrocious. Perhaps the worst offender is the rancilio single basket that comes with the silvia. This basket holds very little coffee and it spreads it out very thinly. It is very easy to dose too much coffee into it to be able to put the pf in the group. I suspect that the thin puck is easily cracked if it touches the shower screen when the pf is inserted - something that someone who still has this basket might be able to check, if they were so inclined.

                    Second, dosing consistently is more difficult for a single basket than a double. I think that its pretty likely that peoples doses vary by the same amount, regardless of the size of the basket. Given that a single basket holds less coffee than a double, this means that the error is proportionally greater. For example, if your single basket holds 7g, your double holds 21g and your margin of error is +/- 1g, your margin of error for the single is something like 15%, compared with 5% for the double.

                    Fortunately, I think that this is an instance where the chance of deliciousness can be increased by the use of gadgetry - and cheap gadgetry at that:

                    The first thing that you need is a decent single basket. I really like the La Marzocco single, which is suspect is a generic basket used by a number of manufacturers - for example, BFC. Greg Pullman has the LM singles in his web shop. Veneziano has BFC/LM baskets at their physical shops, but youll have to ask for them. Im sure that there are other sources. From memory, the single basket that comes with the gaggia domestic machines is also really good ... in fact, I think that some of the cafes that I have worked for might still be using them!

                    The second thing that you need is the right scooping tool. If you want to do it the expensive way, you can get Scotties rather cool dosing tool set from Di Bartoli and a number of other sources. If you want to do it the cheap way, you can experiment with cutting up an appropriate scoop tool from some plastic. Paul Bassett uses an ice cream container lid.

                    The technique is pretty simple; essentially, you just dial in the grind so that you can use the scoop to get a consistent dose for the single basket. From memory, when I dialled in the grind for the double LM basket so that I ground, rapped twice and struck off level, I needed the number 18 tool from Scotts set to use the single basket.

                      Alas, I have (and keep attempting to use ) a Silvia single. Would any (or all) of these alternatives be good for a Silvia?

                      Is the idea not to have a level distribution before you tamp, then? How does that work?

                        Ideally you should have a flat surface (unless youre going to try to match the shape of the scraped puck to the tamper to the showerscreen, oh dear lets not start a flat vs concave puck surface debate, noooooooo!). AFAIK the idea of those tools is to allow you to very slightly vary the dose without changing your dosing technique or grind settings. To be able to use them the way theyre designed (a quick wipe IIRC) they have to have a smooth surface to slide across the top of the basket.

                        I guess ideally youd start off with a flat surface and then the other tools would have a step of varying size to remove material from the basket so the surface is still level, but thatd be very slow to use and hard to get all the excess coffee out of the basket. So the surface is curved which allows variation of dose and quick operation but results in a concave puck. You could call it a compromise and youd probably be right but Im not sure how else the same result would be achieved without severely compromising the effectiveness of the tool and the speed at which it can be operated.
