    GDay CS

    My espresso machine does this 5 second pre-infusion thing.  Should I time my 25-second pour from when I hit the brew button, or from the end of the pre-infusion stage?

      Andrew, I wouldnt use timing as the sole determinant of when to stop extracting.

      Also monitor the rate of flow, degree of crema forming in the cup, & hit the stop button when blonding is starting to fill your cup ... should/could be anywhere from 20-30 seconds, but not a rigid 25 sec benchmark.
