Aroma of freshly roasted coffee

My freshly roasted coffee smelled terriable (even I degas it for a couple of days). It doesnt have the same aroma as the freshly roasted coffee from the commerical coffee roasterary. It smells like stale coffee. Is itdown to my roasting technique or the machine? Im using I-Mex at home. I normally roasted my bean just reach the SC.

Hmmm,
What does it taste like?
What quality were the green beans?
I had a look at the Imex roaster on the net and it looks OK, how long did the roast take? and how long between first and second crack?

GW: it tastes alright~~I roasted Kenya A for the last couple of weeks. THe coffees taste gd and the aroma of the coffee is alright (I dont know how to describe the aroma, but the coffee do smell alright). But the aroma of "the bean" just doesnt smell right~~It doesnt have that toffee aroma (gd coffee smell). It smells like stale coffee. THats what i smell after 2-3 days.

Thundergod: I degas the roasted beans for a day in an open container and than put them in the vacume coffee saver (THats what i normally do).

THe thing that frustrate me is that, I cant get that lovely roasting coffee aroma since i started roasting my own bean.

O more about the roasting~~~
According to my roasting notes:
I roasted 130g of "Kenya A" for the last few times. (I bought the bean from the coffee event in Melbourne early this year). It takes around 7 something mins to the FC, and another ~7mins to reach the SC everytime. I always stop my roasting when i hear the start of SC. I didnt go into the rolling phase of the SC at all.

I wouldnt be leaving them in an open container.
Oxygen is no good for the beans.
Id also advise against vacuuming them for storage.

I and many others put them straight into one-way valved bags after cooling from the roasting.
The valves let the beans degas and you can squeeze the air out of them between uses after that.
I line my bags with a cheap freezer bag so I can reuse them many times without the trouble of trying to clean them.

So u reckon it is the storage problem? I want to ask what is wrong with the vacume coffee saver? CAn u tell me more about that? And please give me some advice about how to store freshly roasted coffee

Im not sure its a storage problem but its best to eliminate that as a possibility.

As I said, storing in one-way valved bags is best as far as Im concerned.

There are a lot of people of the opinion that the vacuum coffee saver is not good for the beans as it speeds up the aging process by sucking out the volatile oils.
They will come out eventually as the beans age but by creating a vacuum you are aging them faster.

Get some one-way valved bags and see if your problem goes away.

From what Ive read they are fine to be reused.

It is advisable to give them a wipe out before reuse though - and make sure they are dry before putting the new beans in.

The bags do have a lifespan though, it is more about wear and tear I think. Others who reuse them might join in with actual knowledge soon

To re-use bags you will have to clean and dry it, quite painful to do. But if coffee oil is not cleaned up thoroughly it goes rancid and affects the next batch.

Nowadays I store my coffee in microwaveable plastic container with a pressure vent valve. Easy to wash and you can get them from woolies (I live in QLD) quite cheap.

As Shannon said, the ziplock eventually wears out.

In the meantime though, I have been extending the use of mine by lining them with cheap freezer bags.

When its empty you throw the freezer bag out and theres no need to wash and dry the valved bag.

I reckon this may also help extend the life of the valve as its the most delicate part of the whole bag.

Cheap freezer bags cost less tha $0.01 cent each.
