I have always used the need cycle at the start.
I tend to have the gun set at about 550 and then drop the temp of the gun as the DMM approaches 150 so as to lengthen the roast and i aim for FC about 11min but lately with the hot weather its been hit and miss.

The Ozito just stays at the same level, and I dont reduce back down to 300*C. I also have it aimed midway between the centre shaft and a corner.
I can imagine itd be a new experimental curve all over again to find the sweet spot with a new size.

Avoiding modification is a bonus.
So you dont need to raise the gun after FC? I have the Ozito as well. Do you switch back to 300 towards the end? Im guessing you dont as it wouldnt maintain enough heat.
Glad its working. Im just getting used to my 2nd BM...Breville Big Loaf. larger batch sizes and wider/shallower bucket mean totally different temp requirements.

The theory is that I havent yet had to turn into an electrician to modify my breadmakers cycle

Its creating a lot better roasts now than before when we powered 500*C heat onto the room-temp beans in the room-temp BM. I think youre right about the slower ramp up. Definitely isnt baking, and definitely the roasts are better.
I also dont need to alter the height of the heatgun up during the roast like I always used to, to stretch the roast longer.

whats the theory behind this? it obviously slows the ramp to 150deg and produces a more even roast in the early stages. are there problems with taking too long (baking etc.?) to arrive at FC that you would need to consider?

Hi, just thought Id share a discovery and interested in any others who have tried this.
My BM has a 5 minute slow knead cycle before kicking in with the fast knead cycle for an additional 21 minutes or so. My husband decided one roast to put the beans in, then set the Ozito heatgun on 300*C during the first slow knead, then up to 500*C for the fast knead, and guess what? Getting gorgeous roasts. Ive kept his technique since then.Tags: None
