    I have lived in FNQ for the last 2 years in Aurukun and this year moved to Weipa. I have always stored my beans in the bottom shelf in the pantry at the back and have never had any issues with my coffee, apart from my wife saying i take up too much space and how much the whole pantry smells like green beans.

    I will be very interested in seeing pics of your modded vacuum and hear how it goes for you as i might give it a go also.

    Thanks very much for your reply Mal, I think thats the way Ill go. I note Sweet Marias do this for the coffees they source from Australa but state they do need a few days recovery post vacuum.

    And now....to start modding my vacuum cleaner

    Im no expert Epic but lived and worked in various places around Australia above the tropic line and also in and around PNG. Where air-conditioning a small room isnt practical or viable, Id reckon vacuum-sealing "roast size" batches in individual bags would be fine. Some processors actually ship and sell their beans this way so I dont think there is anything wrong with the idea...

    Green bean storage in hot & humid climates

    Any FNQ or Darwinian CSers out there that can share their experience & tips in storing green beans in hot & humid climates?

    If the generally accepted advice is "in a cool, dark & dry place in a cloth bag" how do you vary this? Would the benefits of vacuum sealing outweigh the penalty in not letting them breathe in a cloth sack?
