Re: Tips for corretto roasting PNG Wahgi AA

Have cracked open my Wahgi from this second roast and it is much better. I am seeing why so many of you love it.
Roasted to only 1 degree shy of where I predict 2C would be on my setup.
Would agree with Bassways previous description of chocolatey port and very long lingering taste. Very nice.

    Thanks for the help

Hi Pavoniboy, my PNG roasts are similar to most above, I take it out with good heat for 5 minutes then ease back gradually and reach first crack at between 11-12minutes, I then cut back the heat to 3C per minute to just before second crack begins around 16-17mins.
First crack on the GMC is usually around 195-200C and second 215-220C depending on bean and ambient temp in my garage.
I initially took PNG beans just into second but on advice from fellow roasters started pulling before 2nd crack and noticed an improvement in flavour quality.

I generally go for high heat to start with a ease off as it approaches FC and then let it glide through to the first snaps of SC.
A great tasting coffee this one.

I used to follow S type curves an a number of coffees but of late i am putting more heat earlier to get the temp up to 140 - 150deg before easing off as it then stretches out to FC at about 185deg and 10 - 11 mins and then SC at about 205deg and 15 - 16mins.

I have found by changing the profile that my roasts are far more even than before.

ditto....get to 150deg by 5min. FC by 10. and pull just shy of second or on second ~215deg in my corretto (about 15-16min).

    Hi Pavoniboy,
I tend to roast 1cr about 192deg 10-12 mins then try to finish before 2cr at about 215 deg.
I have done about 7 roasts in my corretto with 2 different lots of Wahgi
a few in my old pot roaster and 1 in my Shrek popper and found it roast very well in all roasters the pot roaster needs a lot more heat.

With my early roast in the corretto 2cr was constantly around 220deg.
Your temp reading may differ to other peoples so its best to know your equipment and take notes as to where 1cr and 2cr are in relation to your monitor and roaster.

    Hi Pavoniboy,

I went a bit further than usual with the last roast and did not like the result. Hit rolling SC and the beans oiled up a little within days. Just not into it in a Short Black at all, but my mate was loving the difference with the darker roast. Each to there own, try a few different levels and see what you prefer.

    Gday Pavoniboy,

Head over to the cupping room,
    http://coffeesnobs.com.au/YaBB.pl?num=1237180436

A few roasting tips in that post.

I have tried both a s roast and a straight ramp to FC and found little difference in the cup.
Did find a small difference when taken just past SC and just before SC. Just before SC the the cup was a little lighter. Just after SC the cup was a little darker but the same basic taste was present.

One other thing I noticed was how little heat energy was required between FC and SC. Also hit SC a couple degrees less then other beans.

    Hope this helps.

Tips for corretto roasting PNG Wahgi AA

Anyone willing to share some tips or even a roast profile for roasting Wahgi?

I use a corretto and typically roast 500g of green. I usually go for a S type curve on my roast profile, that is starting slow and ever increasing the gradient as I go and then backing off into first crack and stretching 5-6 mins to first signs of second crack.

I have only done one roast of Wahgi so far and pulled it quite a long way shy of second crack (I was paranoid of hitting second crack as I had read everywhere on here to pull before this)...probably pulled too shy of second crack. It had a lot of green, grassy flavour and no hints of chocolate or the like that I read others get.

Any advice on how to make the most of the rest of my bag would be highly appreciated.
Working...
