You might like to read through the following thread for some info. Of course, roasting is subject to which variety youve purchased, but the info there should at least give you the basics. Probably best to start with a small amount, say 250gm, and tweak it from there.

Roasting Cocoa Beans
Hi Guys,
I got my Cocoa Beans from beanBay last night. Im cant wait to get a chance to roast them! Hopefully in the next couple of days. :-)
Anyway, has anybody tried to do this yet, and how successful was it? Any tips for us about to do it?
The main thing Im concerned about will be the beans getting stuck in my coretto. I had to file a lot off the paddle to make it not get stuck for coffee beans, but I suspect the cocoa will get stuck. But I haven tried it yet :-)Tags: None
