OK, I think I need some help here. I have had several attempts at roasting Nicuraguan Altiplano without much success-- they always seem to end up quite bitter and with a strange hint of mothballs (not the warm rounded spice and chocolate hints I was hoping for). I have tried a number of roasts short of a rolling 2C and 60 secs into 2C in my popper. All seem much the same result.
Any ideas?
