  • (Update with pics) Illy aluminium tins. Small hole at the bottom.

I just finished a tin of illy coffee (woot..in a few days) and im about to roast a fresh batch of beans.

    I got the tin because
    1) it looks great
    2) an empty jar costs half as much and doesnt look so good and doesnt come with coffee in it.
    3) i heard Illy uses some fancy nitro tech to keep beans sorta fresh.

Now im wondering whats this mysterious hole at the bottom of the canister. Its small...not unlike the one on pressurized baskets. It looks like its taped over with a plastic thingy, and there is a bit of clear (mineral?) oil in it and a small bubble floating around.

Any ideas what this could be?

    Picture would help...

Sounds like a vent in-case of excess gassing and thus causing a issue with a lid or tin being bulged or popped.

Thus to the consumer... A clean formed tin must be FRESH

      There we go

note the beans are Panama Boquete, not the illy ones.

      Illy Coffee: $16 for 250gm.

Panama Boquete home roast: $3 for 330g (275g post roast) ;D

I think that might be your one way valve ezralimm...

The two sides(length ways) are permanantly stuck to the can and the darker strip in the middle is semi stuck.

The gassed from the can come out the hole in the centre and escape through the tape like substance which reseals its self straight away not letting any air back in.
I imagine the oil you mentioned was just that...oil from the aged coffee that had escaped through the hole under pressure.

I seen these on the bags of coffee i got from CosmoreX Coffee in Canberra late last year and have not seen them since.

I would love to know where to find some though ?...

Nice. Well see how the tin performs when re-used over and over.

Its a really practical size for my consumption of coffee. I roast about three popper batches of beans every week, and this tin is just perfect to hold three popper batches.

I always thought that the hole in the bottom was where they pressurized the can with nitrogen after it was sealed.... if the seal plug allowed gasses out, how could it be shipped under pressure?? :-?

I think you will find that they actually flush / use the nitrogen to displace the air etc.. Not to put it actually under pressure.. If so they would POP when ya open them. Like a lot of food stuffs, slight neg pressure and sometimes with an inert gas.

If the lid is popped - ya know the food is off ;D

With coffee in a tin / bag etc flushed with nitrogen / slight neg pressure it pulls in on the seal.. Thus air is excluded. However over time as teh beans / product gives off gases... Has to go some where...

Bloated can = Off product to the general populace.... Not good for sales...

Thus this small seal will leak and with some luck self seal and 12 months on; you have have TOP Quality Fresh Illy Coffee ;D

Ive never opened one of these cans before, but the 3kg Illy cans are definitely pressurised. A whole heap of gas when you open them up. The beans are not off or rancid or decomposing, just a bit flat and stale tasting as they are anywhere over 12 months old on delivery. They have a rubber seal on the lid that you remove to let the pressure out before unscrewing the lid.

No there wasnt any escaping gas or any signs of high/low pressure in the 250g tin.

But i second you on the taste. Its definitely not fresh, yet i wouldnt call it stale. Better than normal valve-bagged supermarket coffee...but at an exorbitant price.

They also go stale REALLY quick. I was surprised how much it changed ONE DAY after opening the tin.

Needless to say, the tin was finished in 4 days. But even by the fourth day, it was starting to smell off.

Some years back I ran across an article that described the specifics of the comparison tests that Illy was doing to fresh roasted coffee vs their canned stuff. One of the points that they didnt mention in their ads was that the test was done with beans that were (I think these were the numbers.) used between 15 minutes and 1 hour after unsealing the can. The beans needed to sit for a period of time for the inert gases theyd been packed in to escape and be replaced by the normal atmosphere or the beans would taste flat. Then after only a brief period of time post unsealing the flavors rapidly degraded.

I wonder how soon after roasting does Illy can the coffee. Plus the flushing with nitrogen: would that remove some of the volatile oils?

Those vents are for whole beans only. The pre-grinded cans dont have these vents. Nothing to vent I guess.

woooh nice, Ive been using an Illy tin for ages now too. Just picked it up at a local cafe. Ive found the Merlo tins to be way better though.

The lids mostly - the Illy ones have a plastic lid that doesnt seal air tight I reckon - the Merlo ones have a tin lid that seals REALLY tight - like a paint tin, you have to go round and pry it open all over. Its great

Anyway, the merlo tins are the best Ive found for keeping the beans fresh - Id recommend them to anyone! Im gonna have a look underneath my Illy one tonight and see if I have the same valve as yours
