dont give up, the bowl and wooden spoon works great
I did my first 20 or so roasts that way and before getting a popper I did the odd one still with small batches of Robusta.The Bowl I use is one that Safeway have in stock still I think with a rubberised bottom. Much deeper and more narrow at the top than your by thr looks of it. When you get your thermocouple sorted out yhat will help to control the temp rise. I found that the easiest way for me to do it was full temp on the heatgun and just control depth into the bowl to control the temp ramp.
