  • de-gassing those beans

    id like to hear what you guys think about de-gassing beans after the roast.
    for me, once theyre cool (about 30 minutes after roasting) i put them in a lock-lid tupperware box for 1-2 days.
    could that create any problems since no air can get out (or in)?

      Yes, read all the aforementioned posts, but locking freshly-roasted beans in an airtight container will not allow them to degas.

      The pressure in the sealed container builds up until no further gas can be absorbed into the space above the beans.

        Ive noticed that if I seal a fresh roast up early-maybe an hour after theyve cooled-when I do get around to using them, their aroma seems to be less developed than if I put them away with the lid ajar.

          I dont understand the physics behind it but it is certainly true that the aroma increases if you leave them for a day or two! :
          I have an old cigar humidor that keeps the beans dry and allows them to degas.
          At first- before I did this, I thought the beans were under-roasted because they simply didnt smell right
          So now I allow the fresh roasted to degass in the top of the humidor~which gets opened a few times a day, and then they go intot he bottom of the humidor in sealed containers. :

              well, i can attest to the wisdom of letting beans de-gas unsealed for 24-36 hours before putting them into something airtight. it seemed like a trivial point to me at first, but i am now a believer! my last roast of Guatemalan, done exactly as the one previous, came out 100% tastier after sitting in the open air for a day. chalk up another rung in the roasting evolution ladder.....yeah!

                I found that if you cannot wait for degassing grinding the beans seems to speed up the degassing process slightly.

                From my experiance ground beans seem to degas in about half the time once ground. Other previoulsy mentioned one way valves, etc. still apply however.

                You probably need to be fairly keen though and I would only do it for as much coffee as you are desperate to drink as it will also speed up the beans deterioration after roasting giving them a shorter shelf life than if they were left whole and ground as required.
