  • Roasting and Cratering

Still playing with the KKTO and picked up on a number of beans with cratering - coffee is still great to drink. But I beleive this is caused by high temps from 1st to second crack ?

I havent set up a temp probe yet but process would normally be a heating upto 30 seconds into first crack, heat off and burp 4-5 times - 2 mins later heat back on to second crack about 4-6 mins later. I guess its pretty hard given outside temps etc - I normally do a stablising thaw of 5 mins before ramping the temp up to.

Maybe heat off on start of first crack ? Any thoughts from fellow KKTOs ?

Scollops those divots on the beans should not be a concern
This can be overcome with careful use of heat control on your KKTO

They are from to much heat or hot spots at the time of or before second crack

One other thought - beans types can act differently at some points in the roast

As you can roast 2 different beans exactly the same
One bean will get divots the other may not

Divots will not alter the taste/flavour of the beans
And you will generally see only a few beans that it happens to and not the whole roast

A bit of practice & familiarity of the KKTO and you will be a champ at it in no time
