    Dont forget different beans require vastly different roast profiles. Large hard beans like kenyans need a lot more heat up front, etc.

    I have to look in the 2 side mirrors and the rear-vision mirror at the same time that I look forward, indicate, use 3 peddles with 2 feet, read a speedo, street signs, speed signs and follow road rules and watchout for animals, people, other road users and road abusers.  Surely no-one can actually do all this at once?  I really thought that if I had keys in my hand I would drive perfectly.

    Sounds like you want it all to happen too fast.  Its a process, an education, a journey and there are many many components that make or break what you get in the cup.

    I suggest you get on top of your grind, dose, tamp, pour and then start experimenting with roasting... making 1 single change at a time is the best way forward.

    ...and you are right.  If you dont understand what your grind/tamp/dose/pour is doing to your cup then making roast profile changes is fairly pointless.

    Stick at it though, you will drive one day without moments of panic and kangaroo hops.

    To long and your beans can become baked to short and the roast flavours can be under developed. BUT some short popper roasts cna be OK at 7-8 minutes and some commercial roasters roast at around 10 minutes total. So all this means is there are no set rules

    My Hottop D in standard form and operation with 250g of beans will take 18-19 minutes to first crack and it then rushes to second crack in 2-3 minutes unless you manipulate some things on the roaster. The resulting roasts are OK but when I play with it the roasts and shorten time to first crack then stretch the time to second crack they are a lot better

    why first crack @ around the quoted times and not slower or faster?
    what happens?

    Correct!

    Use the roast monitor to replicate a roast that you did previously. You really need to just log without looking until you find a profile that suits your setup. Then you can use the roast monitor to see that you are on the same track next time.

    The temperatures that you hit 1st and 2nd crack will vary depending on where your probe is placed and how it is mounted so the figure will only ever be true for your own setup. Depending on your actual configuration you might see 1st crack as low as 190C and second as high as 230C but you should find that your own setup will have some constants.

    So roast away. Save your profiles and then reload them as a template for future roasts.

    First crack is usually about 200C and second crack 220C

    Time FC 9-11mins and second crack 4-7mins after that.

    These are rule of thumb NOT golden rules.
    My advise is to try and learn to control the roast rather than worry about the figures too much.

    Depends on depends on.......

    For me I start with a 10-12/min ramp until 1st crack and then slow it down to 2-3/min from 1st to 2nd.  But as I close in on 1st crack it naturally starts to slow the ramp to closer to 6-8/min.  But every bean is slightly different and dependent upon ambient temperatures.
