The Yirgacheffe tastes beautiful - even after only a couple of hours rest - and it poured perfectly, with no gaseous billowing at all.

Now on to find the quickest de-gassing variety for milk-based espresso drinks . . . Are we still thinking Ethiopian (I have Harar & Djimma on hand, with Limu on the way).

The Harar is a difficult bean to roast but when you get it right its superb. My recommendation is to really extend the time between the two cracks (4 mins) and stop just at the start of the 2nd crack.
Its my favourite of all beans but a little fickle

Good one. I have both Mandheling and Yirgacheffe on hand. From memory, the Yirg likes a lighter roast . . .
Perhaps lighter-roasted beans dont develop much after roasting.

I usually wait at least 3 days before drinking as espresso. To answer your question, Ive heard from others that Yirgacheffe doesnt require as much of a rest. Im not sure if the same applies to other bright SOs.Can anyone suggest a coffee variety that does well (as espresso) after only 24hrs resting?
Mandheling is actually one of the origins I rest the longest. When roasting for a blend, I usually roast Mandheling the day before or first in the line up. Ive never been able to manage pulling a SO of this in anything under 3-4 days (without it being a gusher).I remember when I first started home roasting someone saying Sumatran Mandheling was best after 3 hours resting!
