I run a stabilising pre roast phase on the KKTO to equalise the bean mass
Then roast as normal

Definitely. THe only problem I have with Damp rid etc is its chlorine based. You can also pick up drying agents such as damp rid (numerous other names) at Bunnings and it does the job as Richard M states.

Id be interested to find out whether this worked out or not...
Also, just for reference, I have large bags (around 20cm x 10cm) of silica gel that I get from my work (they come with the photocopiers that we unpack, and we just normally throw them out). I pack them in the small cupboard with the green beans, and it seems to keep them nice and dry.

Thanks mate - my feeling is to give them a shot anyway, but I might bake them at 40 first up. I like drying out welding rods before arcing so why not beans..

Id roast them anyway, but Id personally try drying them in my oven at about 40 degrees first (not all ovens can sustain this low temperature though). Any bacterium that may have grown are not going to survive 230 degrees Celsius. I reckon roast them and see what they taste like.
Others may completely disagree but Ill usually take my chances with three day old pizza :P

Hi All,
With the recent very heavy rains in Brisbane some of my green beans stored in the original muslin coffeesnobs bags and placed in crazy clarks plastic containers downstairs have become a little moist - the only reason I knew initially was that some of the bags had some green (light colour) ting to the outside where the beans were pressing against the material. I opened them and there was an odour and some of the beans are slightly discoloured. I feel that these beans are history, but has anyone had that problem and roasted them successfully?
