Just from the general appearance of the beans, Id reckon youve gone 20-30 seconds into 2nd-Crack; due to the slightly oily surface and smooth surface texture.
As far as trying them is concerned, Id be having a go immediately mate and then every day until theyre gone. This way, youll get an appreciation for how the flavours develop over time and arrive at a point in time where the beans taste their best, to you. You can then leave future roast batches of this bean sealed up until that day arrives.
Mind you, if you change the roast profile slightly, all this will change and youll be up for daily tasting sessions until you hit the new flavour peak. A terrible job but someones got to do it..... :P ;D

First crack was at 13 minutes, second at 18.
250gm green, 199 roasted.
Looking at the cs card I think its about an 8 or 9?
When should I start tasting, do I give it 3 or 4 days?

I can recommend both the Peru and the PNG beans as they are great as a single origin for beginners and blending is just too scary.
When i started out on a popcorn maker, i found the Peru from the sample pack a great bean for newbie roasting, and can say, it tastes great too as an espresso or in milk.

Hey dbd - welcome!
In addition to the Ceja, which is an "easy" bean, the PNG beans are also worth a punt. And not expensive (and very tasty too!).
If you look over at the blending forum and the embarrassingly long thread on the KJM blend, that is one I do day-in day-out in the Gene with close to 100% repeat-ability. But it does need 4 different beans :
The technique I use is one that isnt approved of by the Gene purveyors. One of the big deals youll discover is that the Gene does not cool the beans quite fast enough. Getting the beans cool quickly after roasting does (IMHO) improve the quality of the roasts. But Id suggest you just let the machine do its thing first, and then maybe cup a quickly cooled roast once youve got your first few dozen under your belt and are au-fait with the Gene.
The Gene is a good roaster! Enjoy!!

I definately agree on the above posts, I found the Ceja de Selva a very easy, consistent bean to roast (and obviously really tasty). This made troubleshooting on my KKTO copy much easier, especially when I first started. So if your still getting to know your Gene (times, temps, grams) its probably a good idea to use something a little more predictable in nature.

Couple of other thoughts:
If you are paying freight, it is worth ordering several bags at once (how much depends on freight method).
I started with monsoon malabar and it was probably not the best choice.
You may want to order a couple of different beans to help you experience a variety of flavours after the first few roasts, just to keep things interesting - try an alternate, then go back to the peru.
If it is just for you, you will get a lot of roasts out of 2.5kg.
Most of the beanbay beans will say in the description if there is anything tricky about roasting them.

I will suggest that roasting is part of the fun.
what bean to use. Compared to the tired old supermarket coffee that many people drink they will all seem good.
I would learn on the less than $20 per Kg beans until you are confident you are likely to get a usable result.
compared to astrophysics or atomic theory it is quite easy
I would imagine with a specialist machine that after the first 3 to five batches you will have a good idea what to expect.

Yes mate, that Peruvian is a wonderful bean to not only learn on but is just fantastic in the cup. It really responds well to slightly different roast profiles so once you have gained some confidence in the roasting process with your new Gene, some experimentation will prove very enlightening... 8-)

Im new to roasting, just ordered a Gene. Can I get advice on a good bean to start out with? Ive got the cs sample pack, but once thats gone I want to roast the same bean for a while as I learn. Think I read somewhere in a thread that the Peru Ceja de Selva is a good bean for beginners?Tags: None
