    no. there is no acidity at all which I like. Roast has been done for plunger stopped near after end of 1C.

    as Ive found later nicaraguan beens deserve darker roasts even for plunger.
    hahaha. in the meantime I had roasted again but roast did escape from me pulled out just at rolling 2C. It was so boring taste that I cant remember now of it.

    yep, I know that. but the same taste was with plunger.
    however,my search for improve will continue.

    could it be that guatemala bean as SHG had left green unroasted in inside layers due to low heat roasting properly just from outside?

    Im still stuck in the old days without a Temp Data Logger (i could never get my head around the concept of getting the probe inside the drum without a hassle) so i just have to work with time and colour which obviously makes it harder to accurately hit those times regularly.

    I did, mate.
    I generally open my bags about 5 days post roast (later for my Africans) and test them each day until about day 14-15 (again, later for African beans).

    Ah, thats interesting, GaG.
    Ive had some good beans at both ends of the spectrum (3 minute gap through to 6 minutes), but generally im not happy with either extreme so need to find a way to hit the middle point consistently in hope that i find a nice balance.

    From my own palate anyway, it tastes better when there was a 3 minute gap between 1C n 2C compared to a long 6-7 minute gap with a lengthy stall straight after 1C, when i tried to compensate for the exothermic (meaning beans expelling heat) reaction.

    Im with Ristrom with the sweet spot at 5 minutes.
    Calculation is around 3 deg celcius per minute rise until 15 degrees later at the onset of 2C.

    As Andy mentioned, the acidic character you described may be mixed with the brightness of the Hue at the lighter colour profile. But then some snobs do enjoy brightness in lighter roast.
    Roast it darker to C9 and try for a 5 minute gap, you may get the balance of sweetness, acidity and still retain the character of the beans.

    Perhaps try another round until you just hear the first cracks of second, then cool the beans.

    Ristrom, did you taste them after 7days based on the C8-C9 profile?
    I find the shade lighter roasted beans taste better past 7 days at least, perhaps due to the longer time needed to de-gas.

    Ive been experimenting with extending the time between 1C and 2C, but so far ive not found that sweet spot.

    With my current method im getting about 5.5-6 minutes between 1C and 2C, whereas a straight roast without alteration will give me about a 3 minute gap between 1C and 2C.

    Im thinking the sweet spot must be around 4.5-5 minutes (i may be way out there, so any of our learned folk, feel free to correct me), although finding a method with the Behmor to hit that consistently is rather difficult, at least for me anyway.

    With the 5.5-6 minutes and pulling at the first signs of 2C im finding my beans taste a little dark (although in colour terms, its generally a CS9-CS9.5 at most), but with the unadulterated roasts, the 3 minute gap between 1C and 2C (and dumping at first cracks of 2C) often resulted in underwhelming flavour profiles despite the beans generally slotting in between CS8-CS9.

    Its quite frustrating but i can but persist and hopefully sooner rather than later ill find a tweak that gives me the lovely roast i crave.

    How does baked beans taste like

    Hi all,

    Im just exploring my Behmors journey playing with times,quantity of batches,etc...
    At last few batches Iwas trying to extend roasting time between 1C and 2C as much as possible closer to 6mins from start of 1C till the first pops of 2C.

    The door was slightly open (hold with brush) from 1min before start of 1C till rolling 1C than door fully open till the end of rolling 1C and after that door slightly open again till the just before of 1st pops of 2C than door closed and start of cooling immediately.

    Result (on french and espresso) after a 10days rest was a rather dull taste,slightly greeny and bittery with just a spark of fruittiness or sweetness.

    Id say that at some time beans had been stale on non move temperature.

    Beans were guatemala huehuetenango and PNG kimel.
    Previously I had roasted these beans much faster without opening the door in 3mins cycle from 1C to 2C and beans were delicious at plunger but acidic at espresso shot as expected.

    Does baked beans taste on that way?
