salty, Iam not good at descripting it ... is that right ? shrimp paste ?
Shrimp paste eh?* I get red wine!*
Oh wow. This is a marvellous bean in the Yemen tradition. Enjoying now as a straight espresso.
Yes, I am getting the wine characteristics that you would expect from beans of this region and yes there is a definite saltiness. But also quite sweet and very much morish. Picking up some almond/marzipan.

And yes, I have had this sitting in my bean cupboard since 2011 and only recently cracked it . I'm going back for more.

it only rested for two days, I have to try it, it is good, very rich in color in espresso, also very delicious for latte, yes it costed more than Peru ceja de Selva, & PNG but it is good.

Shrimp paste eh?  I get red wine!
Maybe I need to be buying better bottles of red if they smell of shrimp
    ;D

With that Yemen the coffee fruit (cherry) is dried on the seed (think sultanas) and removed later.  The ferment from the fruit smells like a red wine to me with a lingering sweetness carried in the aroma... I can nearly taste the sugars from the cherry.  If you have eaten the ripe cherry of a coffee tree the "smack of sweet" comes back to you.  I had amazing aromas at the Snobbery when I bagged that lot.
