    I often find for my taste that the less done beans take longer to mature and lose the sourness. Of course, if they are too underdone, it may never happen.

    I like my "espresso" beans pulled and quick cooled at the first tentative snaps of 2nd crack. I do them lighter for the Aeropress at work.

    Colour is good (but not always the best indicator).

    They look a little "leathery" on the surface and I would say not long after 1st crack.

    As the beans get closer to 2nd crack they will swell and fill-in that leather surface.

    Chew one... see if its firm... and maybe a little straw, grassy, farm like and slightly sour.

    Go longer on the next roast and you should like it more.

    Im roasted indoor at a ambient temperature about 20-21 degrees, so it should not be a problem.

    But you are properly right Andy, that the roast is under roasted, I have attached a picture of the beans, hope you will have a look at it

    Under roasted would be my guess.

    ...sour is green
    ...bitter is a little overdone
    ...BBQ is well overdone

    The price per roast is pretty small so its often easier to roast too dark (bitter / bbq) and then step back a little on the next roasts until you find the "right spot".

    How cold is the ambient temperature there? Very cold air gets sucked into the roaster and might not be heating up enough.

    The coffee beans I roasted two days ago, still doesn´t smell, but I will give it some extra days The taste of the coffee is slightly dessert with a flavor of amaretto, but also a little sour

    This has been covered elsewhere on the forum, but the short answer is:

    The smell is the beans going stale, just wait a few days.
    The smell is the flavour evaporating--how does your coffee taste?
    It will help if you make a bean cooler rather than rely on the 10 min. Gene cool down. A minute or so is better.

    Yes I use a air tight bag, which I put the beans straight in after the Gene Cafes automatic 10 min cool down system
    When I come back to check the condition and smell of the beans, the color is fantastic but the smell is weak. This is sadly the case for all the different types of coffee beans I have tried. The smell of the freshly roasted coffee beans is weak and not as rich as roasted coffee purchased from the local shop.

    I wonder if it could have something to do with the temperature not getting high enough or maybe to short a roast?

    Hi Hendrup,

    I dont roast in a Genecafe however i use a Corretto (bread maker). I will ask though, after roasting the beans do you place them in a air tight bag? Like the bags you can buy of of here in beanbay with the one way valve.
    I roast mine cool them down and have one fo these bags ready and throw them in. I can go back about 20 mins later and have a quick smell and normally they smell fantastic.
    I have never roasted Uganda Bududa AA, so i cant dcomment on if they have a particular smell to them or not. Im sure someone with more experience will have some vauable advice.

    Hey Guys

    Im new in this forum, but I´ve checked several treads which has helped me in the pursuit of the golden drops of espresso

    I have recently invested in a Gene Cafe, which have giving me som great results of home roasting, but the roasted beans have no smell after done roast ! I would have guess that the smell would develop within 1-2 days, but it hasn´t.

    I use green beans from Uganda Bududa AA Farm Mountain and my roasting time is set to 16.5 min with 241 degrees.

    I get a great color of the beans, but no smell like purchased roasted beans from the local shop.

    Can any experienced members give some advise on this problem?
