Also just started on popper roasting and have had similar questions.
Have found this a useful guide to help identify stages in the
roast:

We inadvertently found out just how far a roast can go on very first
attempt, in a fan forced electric oven. Preheated oven to 270C+.
Inserted tray, and watched beans go, in very short time,
from green to brown to insane crackling noises to smoke and then black
Did manage to refine the technique later.
Soon found a popper and have been using it since, and now
getting roast times around 9min30. Tilting the popper helps make it a
bit slower. Still experimenting, trying to learn ...
