    Thanks for that Mal,
    I gather you dont want to let the roast go beyond 20min total so if I wind the heat back to make the time distance between the two cracks I could be on the money.

      Ideally you want a minimum of 2-3 minutes between first crack and the end of the roast. It is during this period that the flavors of the beans are developed and if it is rushed the flavors do not have time to develop properly.

        Whoops, I mis interpreted the sketch then!
        I just blasted off two new roasts to test the extended inter crack phase

        1st crack at the 4 minute mark
        Second 9 min later!

          I started with all burners on full, then tried to keep the temp down in between cracks

          1st crack at 4 min
          2nd crack 8 min later!

              2-3 minutes is the mininum time. Extending the period out beyond that then becomes a matter of bean/personal choice and what the roaster is physically capable of.

                Hi Presso,

                As Java says, 2-3 minutes is the bare minimum time lag between the end of 1st Crack and the start of 2nd. Theres not much point in having a roasting method with a lot of control if you are going to cramp the key roast period into such a short time. Generally, with my previous popper (using a Corretto BM Roaster now 8-)), Id aim for 1st Crack to start in the region of 5-6 minutes after commencing the roast.... After 1st Crack ceases, Id ease the heat off a little (using a very technical piece of old seasoned hardwood fence paling to throttle the popper exhaust) and coast the roast out to the first snaps of 2nd Crack by about the 12 minute mark. If I was roasting some really hard beans, then Id probably allow the roast to progress further into about the 30-60 seconds of Rolling 2nd. Its all done by feel I guess, taking stock of the appearance of the beans, the colour, the aroma, smoke if any and of course the time progression.

                With the new Corretto Roaster in action, 1st crack starts at around 12-14 minutes and 2nd starts at about 17-18 minutes, with Rolling 2nd about a minute after that. Ive only allowed that to happen with one bean so far, some really hard little Yemen beasties that seem to need a lot more seeing to than others. Great in the cup after though.....Bliss :P,

                  Thanks Mal,
                  Ive cupped a sample of each of the beans.
                  On the whole a much more complex set of characteristics are being exhibited by the same beans Id done in the popper.
