Re: woodfire roasting
I been using that method for a while now in our shop for something different and best of all, at home. It is great! We have many people ask when I will roast using that method.
I use all types of green coffee with success, even pre blended beans.
I use wood, briquettes, hot plates.
Roasting is done in cast iron skillets and pots or even campfire popcorn roasters.
Any steel or iron that wont melt at temp works - but it should be a safe and clean material.
It does have a different flavor and usually a great body when brewed correctly.
I stir the beans constantly by hand and by shaking the cast iron skillets and pots.
I am using cherry, apple or hickory wood to "smoke the beans" first and while actually roasting.
Try it, it is great! I love roasting this way.
Anyone wanting more info just email. I am located in the state of Idaho, USA.

Re: woodfire roasting
Just a possible problem with the oven thing chaff hitting the bottom element catching fire
not to mention potentially smoking up the house and becoming really unpopular
Might be nice to have smoked beans with sandlewood kind of like having syrup coated beans
Slightly more seriously you would want a fairly smoke free fire from a clean burning timber, a little smokey flavour might be nice but it would be easy to overdo it.

Weve got a pizza oven that runs 200 to 320C* and sort of controllable to within 50C, so the temperatures are in the ball park. However, there is no way on Gods earth Id be allowed to drill holes through the side of it. Could the beans be laid out on a tray or directly on the stone hearth with shaking or poking with a stick?

While a drum wouldnt be essential, it would be desirable...if for no other reason it would keep the beans agitating.
Rather than the oven, I think a frying pan over a hotplate would be preferable as it would allow you to have better control over the temperature, agitation, and dumping the beans once theyre roasted. The challenge you face with either method is to try and not scorch the beans. It might help if you think of it in terms of cooking - brown on the outside and rare on the inside can be ok for meat, but not so good for coffee.
Either way, give it a go - you know you want to!

Re: woodfire roasting
put the drum in the oven through the front door, then have the rotisserie siting outside the oven, whith a s/s support in the oven. It could be done, its all in my head though, hopefully it will get out one day.

Re: woodfire roasting
I watched a video on youtube of a bbq roaster on a rotisserie in his bbq, so i think that if you are lucky enough to have wood fired pizza oven you coud rig up a rotisserie on the outside with the drum in the pizza oven, you could easily get the temps needed. Thats what I am planning to do anyway, and cook pizza of course, you cook pizza up around the 300 to 400 mark, so if anything it might get a bit too hot. Just got to build the pizza oven, but there pretty expensive from what I have seen of them on the net. But i think it would work really well.

Re: woodfire roasting
Its probably the first ever method of roastingOriginally posted by summercrema link=1221295574/0#0 date=1221295574the method of Woodfire Roasting coffee bean has it been around long, what do people think of it? Using different kind of heat or fire to roast the bean. Any comment out there?
I believe this original method is still used today commercially in the Middle East
There are some boutique companys in Sydney that also woodfire roast coffe
Edit
Yes that leaves another question??
Would the wood smoke penetrate the bean while roasting giving it a different taste in the cup?

Re: woodfire roasting
What size fire would you need to consistently generate heat of over 200deg?
