    It was boiling flat out and I needed to wear a rubber glove to protect my skin from the steam while I held the probes in the water.

    Its a pretty crappy DMM so I never expected it to be super accurate, but I didnt think it would be out by that much. I wonder how far out it is at the higher temps during a roast

    I would guess that most cheap meters are rated at +/-10% so 90C. is still about right.

    Accurate scientific equipment will cost you alf a grand or more so as long as it always reads a similar number I dont think it should be too big an issue for roast monitoring.

    I live in West Gippsland near Warragul, Victoria. About the same level as the Princess highway

    10 degrees out. Both probes read 90 in boiling water so Im gunna take the DMM back to Jaycar and exchange it for a different, and hopefully better model.

    Thanks for the tips Dennis, much appreciated. Yes, I guess with each type of bean temps for FC, SC, etc. can vary quite dramatically and each roast is a new adventure. Now that my DMM is a bit stuffed Ive just placed a new bigger and better one with logging capability on my Christmas list so I can plot some charts after roasting.

    I do, usually quite diligently   , stand next to the BM (it’s down below resting on the deck tiles) while roasting and watch the beans go round and round…and round..., but perhaps with this roast the cracking sounds were so subtle I would have had to place my ear right next to the beans. Ouch ...     Or, FC just didnt happen??

    I, too, start to get a bit worried when the beans are still in the basket at the 20 minute mark. Ive just adapted my heat gun stand so it will be easier to raise and lower while roasting. The way I had it set up before it came to rest on the BM at a certain level and couldnt be lowered any further. Fine for some beans, obviously not good enough for others. Cheers.

    Just some thoughts...

    Use the DMM to give you an indication of the degree of temp ramping times - dont get to hung up on what temp FC and 2C occur.  Apart from knowing what is happening, use it as a tool to predict what will happen, and when its likely to occur.  Knowing when your close to FC will of course allow you to understand when to back off the heat and coast to 2C.

    IMHO, anything over 20 mins is probably going to stand a good chance of tasting baked and flat rather than roasted.

    Finally, DO stand next to your roast - walking away can be fraught with danger.

    Ive got a feeling that Chris went through and fixed it @ 4:39 and Buschy has gone and changed it back to the wrong spelling @ 4:43.
