Two things you might mention to him. Popper has to power two things, the fan and the heater. You probably want the fan running full all the time, while being able to adjust the heater, which means seperating the circuit. And, sometimes they use the heater to drop the voltage to the fan, so seperating them takes a little thought. Depends on the fan used, and how they are powering the fan in your popper.
Other thing is to make sure the "dimmer" is rated for enough power, whatever the wattage is for you popper. He probably already knows this, but does not hurt to mention. I have seen guys claim to use dimmers successfully for this, just make sure it is rated right.

I use a popper, and the advantage is that you can do smaller batches.
