    So, thought Id report back on the success of this roast. Opened it up on Sunday, and after a couple of shots to dial in the grind, I was getting a very nice pour from Junior.
    As an espresso it was quite thin, but very sweet with low-mid acidity. Unfortunately somewhat non-descript as far as character goes. In milk, it was a very sweet coffee with no hint of bitterness. Theres a slight "toast" from the roast, which doesnt surprise me given the amount of smoke it gave off during the roast. I suspect that this will be unavoidable given how the chaff collects in the pot, but certainly wasnt unpleasant.

    All in all Im still convinced that this is actually a better cup than some of the beans Ive bought recently ;D Now Ive got to get some more roasted in the next couple of days so they have time to age before we go away for easter. Im looking forward to making a coffee for our friends, telling them I bought the coffee from coffee snobs (our friends buy brown here), then letting on after the fact that they were green when I got them

    Yeah, from the few years Ive been hanging around at Veneziano Ive learned that around 8 days post roasr tends to be a good time to start drinking. If you want to drink sooner then youre best off leaving the bag open for a couple of days to accelerate the process. Ive still got enough to get me through until it is ready... its the nervous anticipation as to what lies waiting for me. No plans to rush it though since I wont be doing it justice.

    From experience with the KKTO day 4 & 5 is nice but gets better at day 7 to 10

    Im definitely interested in the lamb leg curing though.  If anyones been to Helenic Republic for breakfast & had the cured lamb theyll know why...

    My partners a chef by trade, so Im always looking for niches where I can contribute. More relevant though is that shes polish, so her family has been known to butcher & cure half a pig (40kg of meat) at a time making bacon, ham, sausage.

    Im just in the very early days, using a weber smokey mountain to hot smoke. Once the roasters complete, Ill be moving onto some modifications for cold-smoking for doing sausages in the winter. Its a little too warm for me to be keen on attempting pancetta or fermented sausages yet. Perhaps an off-topic thread for curing is in order.

    Thats a great first roast, by the way its good to see that someone else has taken to making there own smallgoods .I have been doing it for a while now. Just yesterday finished making some sausages and Kabana.
    Have got some hot smoked rolled panchetta in the fridge and I am curing a 1/2 leg of lamb at the moment

    Thanks KK. I found a homebarista article (http://www.home-barista.com/home-roasting/roasting-defects-pictorial-t13587.html) that had these vids and also showed pictures of various defects. Very helpful in identifying whats happened in the roast.

    Didnt raise my own pig, but I did take a piece of pork belly, cure it for a week in a maple cure, then hickory smoke it to bacon nirvana Ive got to say, this is one of the simplest & tastiest things Ive ever done at home.

    I didnt grow the beans either, but Im hoping in time that I reach similar heights with my coffee.

    Ps, Ethiopians are renowned for uneven roasts so dont worry about the occasional lighter bean.....

    I was pretty pleased with the outcome. I used 500g of green for this one, and aside from a few pitted beans (can I count the completely charred ones as just being "very heavily pitted"?) I was pretty happy with the colour of the roast when it came out.
    Theres a few lighter beans in there as well, but well see how it tastes in a few days.

    One of the guys from BBB in Melb suggested I bring some in to run through the clover, just out of curiosity. Not sure Im ready to go public with my roasts quite yet though.

    Cheers KK. My main concern with the first roast was whether the "support mechanism" (& I use the term very loosely) for the roaster & motor would hold up, and how much smoke I could take in the face while holding it all in place & watching the colour ;D
    Ill be heading down to bunnings next weekend to ponder the construction of a solid base. My biggest problem though was the motor pivoting itself if the agitator got stuck for a moment. Ill definitely need to find a better way of mounting it.

    I also had a little trouble with the agitator jumping out of the 1/4" socket I was using to drive it early in the roast (why did this never happen in my cold-test runs?), but by lifting the motor/agitator slightly it seemed to work itself out of this habbit. Im not sure what effect that ended up having on the agitation though.

    One thing I can say is that my cycling headlights from Ayup-lights (Cree LEDs outputting 400 lumens of clear white light) did a great job of lighting the roast through the lid of the TO, letting me track the progress very easily.

    I can see this is going to be a long project. My missus was pretty excited by my first roast though (even with all the mess I made). I think shes hopeful it will turn out as well as my first batch of home made bacon a couple of weeks back
