    Nothing like having an apprentice trained up to take over when the master retires. So, when does your apprenticeship end.... ;D

    Its going very nicely thanks Mal - lots of cocoa, the morning cuppa is like a nice hot chocolate! Ill definitely try to roast it a bit lighter the next time and see what difference that makes.

    Looking through the thread its interesting to note the steady increase in colour on the Coffesnobs scale, peaking with the Wahgi, I think todays roast looks a bit lighter, maybe a CS9?

    Son #1, now a seasoned roaster of 3 roasts (at 7 years old), reckons todays could have done with a bit longer in the Hottop!

    Well see whether his view is proved true in a couple of days...

    This afternoons roast.... Ethiopian Yirgacheffe Special Prep.

    Interesting small size bean...and just as Andy warns the colour rapidly darkened just after first crack. I ejected with the beanprobe showing about 217 degrees, and a fair bit of smoke.

    May have overdone it a bit.

    And perhaps even as far as CS11.... Nice and even though and with the gentle ramp to 1st-Crack lots of interesting flavours should be preserved 8-)

    Another Tuesday night....another roast.

    Tonights beans, straight from the Snobbery (less than 48 hours from ordering to delivery!) are PNG Wahgi AA.

    Tonight I took a leisurely stroll up to first crack, with it not occurring until 18 minutes into the roast. I kept the heat around the 70% mark for most of the roast. I managed to get the environmental temperature and probe temperature to cross at 193 degrees.

    First crack as usual on 200 degrees, with rolling at around 204 degrees. I dropped the heat back and cranked up the fan, and ejected when the bean probe hit 225 degrees on the dot.

    I think Ive managed my first CS10 roast with this one... see the photo.

    Quite pleased with myself. :

    Thanks for the tips Andy.  Were about halfway through the huehuetenango, and its a cracking bean!   ;D  (you need a smiley for bad puns).

    Ill be very curious to see what the Nuggets tastes like when we reach it on the weekend.

    Not everything you read is correct, but everything you taste is! I have seen some pretty whacky "expect opinions" posted on the web over the years and at the end of the day the results that you can taste carry far more weight.

    Second tip...
    Use less TLAs in your posts for readability (for everyone)

    Your roasts are looking good from here.
    I can see a little bit of tipping (slightly burnt ends) on the beans so you might be starting off a tad too hot (or it could be just the photos / light that I can see).

    You are certainly on track to getting some great coffee though.

    India Mysore Nuggets Extra Bold.

    I tried to get the enviromental temperature and beanprobe temp to cross over at a low temp, but despite keeping the heat low for the first half of the roast, they still crossed just before first crack, ie around 200c.

    Guatemala Huehuetenango...


    Slightly disrupted roast.  Beans ejected well before first crack....

    So I chucked them back in and tried again.

    Tonights roast...Venezuelan San Cristobal.

    Ejected just on the start of second crack, bean probe temp just hit 225.

    In the bag for at least a couple of days...but the Ethiopian Gambella has nearly run out....hmmmmm  :

    The joys of being a Coffeesnob Sniff, you will become very discerning and critical when having coffee at cafes and restaurants getting to the stage where you will abstain and then race home for a quality home brew : :
    Yea and after a while it rubs off. Even my wife no longer has a coffee after we eat out...   She will look at me and say "Shall we chance it ? " AND depending on where we are etc...   We may; as it is the great way to end a dinner.  However, if were are in doubt we dont bother; as bad coffee can just spoil the whole evening..

    CoffeeSnobs  = a noose around ones neck when it comes to Quality coffee.

    First cup of the Gambella roast was tried this morning...

    Very smooth - chocolatey too. I think the extra darkness of the roast makes a difference, quite pleased with myself for getting it a nice 9-10 colour.

    This roast makes me appreciate how acidic (but not unpleasant) the earlier roasts were.

    I had a coffee at a local Italian restaurant last week...and was distinctly underwhelmed. I think I could taste staleness, perhaps the grinds had been sitting in the doser too long?

    Think the uneven roasting is common with the Gambella.

    Previous roast of the Gambella was also uneven for me.
