All this is very new to me and I received my first order of Kenya AA and Brazil Cerrado only a few month ago. In the same time, bought an Ozito HG.
Now I need some help
. I have been roasting a couple of batches (by 250grm) of each and the results have been very inconsistent. The setting is a stainless steel colander in a wok, HG is set on highest temp. Cooling is with a hair dryer. I have a Silvia and a manual grinder.
Brazil: Reach first crack OK after ~10 min. It is not a rolling drum type of noise, but rather some isolated crackling for 1 min or so. I tried to stop around 2 min after 1st crack, so I suppose I did not reach 2nd crack. Color is very uniform, compared to some Mocopan beans I had at the time, I would say medium. The beans are very dry, no signs of oil at all. The brew seems ok, lots of crema, good extraction timing, but the taste is heavy and quite bitter. I am still looking for the sweetness other have described.
Kenya AA: This one seems to take more time to roast. Same thing: 2 min after 1st crack, so before 2nd crack I suppose. Medium roast, no trace of oil on the beans. The beans are quite difficult to grind, as if not dried enough. The brew is very quick, producing lots of crema with bigger bubbles. I have tried to play with grind fineness and tamping force, but no spectacular change. The taste is very acidic, a bit grassy. Where is the fruitiness?
Anybody have some advice on what to try next to get this roasting better ??? ? Any clues to look for to know when to stop the roast?
